Our Easter Carrot Cake Trifle

 

When I was perusing Pinterest, for one of my 2 or 3 (hour long) peeks a day, I came across this recipe.  What could possibly be better than combining Carrot Cake and Trifle?  My husband loves both so I thought I would make it for part of our Easter dessert.

It is DELICIOUS!  It is very, very filling and very sweet but well worth trying.  We thoroughly enjoyed (and are still enjoying) it!

The link to the Original Recipe is on astepinthejourney.com.  The only thing I did different was add raisins!  We love raisins!

I hope you try and enjoy this recipe as much as we did!  While I won’t include the recipe because it is available at the link above, I will share with you the steps as I made it.

 


 

The first thing I did was assemble my ingredients.  I know, that part is a no brainer, even for me!

Now the recipe called for 1 carrot to be peeled and grated into the mix, but lo and behold, the cake mix I bought had a little package in it with pre-grated, dehydrated carrots and some raisins.  Bonus! I didn’t have to peel or grate the carrot!

I also added another egg to what was called for in the mix, and instead of oil I used melted Soya butter, and I used milk instead of water.  We just like the way it tastes more than oil and water…that’s for salad dressing!

I mixed up and baked the cake, sort of according to the directions on the box.

Now was the time to prepare the icing/filling.  Whatever you do, don’t make the same mistake I did and try to taste it after just mixing the butter and cream cheese.  It is not pleasant!


Now all I had to do was the layering.  I started with the cake layer, then icing/filling and repeat.  I saved some of the crumbs from the cake for the topping and sprinkled some raisins on top too!


Doesn’t this look delicious?  We had a lot of desserts, and considering there was just the 5 of us, we had a lot of leftover dessert!  Check this out!

We enjoyed (aka stuffed ourselves) on all of that with our coffee and tea, and when it was time, rolled ourselves to bed!
