Wheat Germ Berry Muffins

Today I decided I wanted some muffins.  For some reason I couldn’t get the thought of Tim Horton’s Fruit Explosion muffins out of my head, so they had to have berries in them.

I found I had half a bag of frozen mixed berries which worked out perfectly for what I wanted!  I ended up making a moist, delicious muffin with wheat germ, oatmeal, honey, cinnamon and of course… berries!

These passed the “Dillon Taste Test,” and he can be fussy as you know what, so I think they are a success!

Here are the ingredients I used:

To start with I put the 2 eggs, 1/2 cup melted margarine (or butter), 3/4 cup of brown sugar and honey in my stand mixer and blended until well combined.

In a large bowl I mixed together the 1 1/2 cups of flour, 1/2 cup of oatmeal, 1/4 cup of wheat germ, 1 Tsp. of baking powder,  1/2 Tsp. baking soda, 1/4 Tsp. salt and cinnamon.

I added the flour mixture to the butter and honey mixture in the mixer bowl, along with the 2 cups of thawed berries. Mix until combined, slowly adding the 3/4 cup of buttermilk as you mix it. Do not overmix.

I scooped it all into my paper lined muffin pan and then baked it at 375 degrees for 25 minutes.

I ended up with a dozen moist, berry-licious, good for you muffins!  Just the right amount of sweetness to satisfy my hankering for a Fruit Explosion muffin!

Recipe:

Wheat Germ Berry Muffins

Preparation Time: 20 minutes  Cooking Time: 25 minutes  Servings: 12 muffins

Ingredients

  • 1 1/2 Cups Flour
  • 1/2 Cup Oatmeal
  • 1/4 Cup Wheat Germ
  • 3/4 Cup Brown Sugar
  • 2 Tsp. Cinnamon
  • 1/2 Tsp. Salt
  • 2 Large Eggs
  • 1/2 Cup Butter or Margarine, melted
  • 2 Tbsp. Honey
  • 2 Cups Frozen Mixed Berries, thawed

Directions

  1. Preheat oven to 375 degrees.
  2. Grease or line a 12 cup muffin tin
  3. In the bowl of stand mixer, or in bowl using hand mixer, mix together the 2 eggs, 1/2 cup melted margarine (or butter), 3/4 cup of brown sugar and honey until well combined.
  4. In a large bowl mix together the 1 1/2 cups of flour, 1/2 cup of oatmeal, 1/4 cup of wheat germ, 1 Tsp. of baking powder,  1/2 Tsp. baking soda, 1/4 Tsp. salt and cinnamon.
  5. Add flour mixture to the butter and honey mixture in the mixer bowl, along with the 2 cups of thawed berries.
  6.  Slowly add the 3/4 cup of buttermilk as you mix it. Mix until just combined,  Do not overmix.
  7. Scoop into paper lined or greased muffin pan.
  8. Baked at 375 degrees for 25 minutes.
  9. Let cool 5 minutes in pan.  Remove to cooling rack or enjoy warm.
