PB Oreo Brownie Cupcakes

Okay, Chris saw something like this on Facebook of all places and sent me the picture… an obvious sign that he wanted me to make them lol!  So, I did.

I used a brownie recipe I don’t normally use and while it tastes great, they are “crunchy,” which I don’t like.  Next time I will do this with my usual recipe… but even if they were as hard as concrete… it is PB, Oreos and Chocolate.  Need I say more?

Here are the ingredients I used to make these.  Other than buying a package or Oreos, stuff that most people generally have on hand.

The first thing to do is to smother your Oreos in PB and then place on top of the other…. like this… and look at that!  I can’t count!  There is one extra “set” of PB coated Oreos.  I had to eat those ones.  I didn’t want them to go to waste lol!

Next I mixed up the brownie batter… eggs, sugar, vanilla and melted butter first… then the flour, cocoa, baking powder and salt.

I poured the brownie batter into my prepared cupcake pan and then smooshed the PB coated Oreos into the batter, PB side down.

Now I baked them for 20 minutes at 375.  I am thinking I probably should have baked them at 350 instead because the edges of them burned a little bit 😦

Now all I had to do was mix up some Chocolate Buttercream Icing and fill my makeshift icing bag to finish them off once they were cooled off.

Recipe

PB Oreo Brownie Cupcakes

Preparation Time: 20 minutes  Cooking Time: 20 Minutes  Servings: 12

Ingredients

Brownies

  • 2 Large Eggs
  • 1 Cup White Sugar
  • 1/2 Cup Melted Butter/Margarine
  • 1 Tsp. Vanilla
  • 1/2 Cup Flour
  • 1/2 Cup Cocoa
  • 1/2 Tsp. Baking Powder
  • Dash Salt
  • 24 Oreo Cookies
  • 1/2 –  1 Cup Peanut Butter

Chocolate Buttercream Icing

  • 3 Cups Icing Sugar
  • 1/2 Cup Cocoa
  • 1 Cup Butter/Margarine
  • 3 Tbsp. Milk
  • 1 Tsp. Vanilla

Directions

Brownies

  1. Preheat oven to 350 degrees.  Lightly grease bottoms of muffin pan.
  2. Spread PB over 24 Oreos.  Press 2 together to form a layered PB and Oreo Sandwich.
  3. In large mixing bowl, mix together eggs, sugar, melted butter and vanilla until well combined.
  4. Add flour, cocoa, baking powder and salt.  Mix until just blended.
  5. Pour brownie batter into prepared pans.
  6. Push PB Coated Oreos into brownie batter until level with pan.
  7. Bake at 350 for 20 minutes.
  8. Remove from oven.  Allow to cool completely.

Chocolate Buttercream Icing

  1. In a large mixing bowl, combine all ingredients and mix until light and fluffy.
  2. Fill icing bag with Icing and pipe onto cupcakes or just spread icing on cupcakes.
  3. Hide brownie cupcakes from everyone else so you can eat them all yourself!
