Cheesy Beef & Potatoes Casserole via bakeatmidnite.com

I saw this recipe on Pinterest… yes, I am a full blown Pinterest junkie!  It just looked so delicious I had to try it for “the boys” for dinner tonight!

This recipe was very quick and easy to prepare and the only things I changed was to use chicken broth instead of beef because that was all I had and I added 2 Tbsp. of sour cream to the cheese mixture.  I also think I could have cooked it for another half hour or so but that didn’t seem to bother the boys at all, they both cleaned their plates!  I just served it with the Pretzel Bread I had made the day before!

I am not going to go into a full blown step by step, I will just do a slideshow of my step by step and then direct you to bakeatmidnite.com for where I found the recipe!

I browned the ground beef and onions, peeled and sliced the potatoes, I mixed together the cheese soup, broth, cream, pepper and the sour cream in my big measuring cup, then I started layering… potatoes, meat mixture, sauce and cheese and then repeat.  Toss it in the oven at 350, one hour later your house smells delicious and the family is drooling over the thought of dinner.
