Mexican Food Weekend – Part #1 – Mexican Stuffed Peppers with Quinoa

Phew!  That was a long title, wasn’t it?  As I am sure you gathered from the beginning of that title, this weekend was for some reason a Mexican food weekend.  Dillon was in his glory… he loves Mexican food, so do I, I just don’t like the after effects I suffer from eating anything with beef/meat in it! But it’s my own fault for eating it, right?

Saturday night’s dinner started with these Mexican Stuffed Peppers with Quinoa, that I sort of borrowed from but added and left out a few things to make them exactly how we like them, no offense of course, just personal preference!


This is what I started with for ingredients.


I browned the ground beef with the green onions, added the taco seasoning and some salsa and then the quinoa (did you know that quinoa doesn’t cook so well in the microwave?  I didn’t, luckily I had a full package at my disposal! I am supposed to be eating quinoa because of the protein content to aid my brain in healing but I just can’t get past the texture of it)

Next I hollowed out the peppers, man, those little buggers had a lot of seeds… I will probably be finding them still next week!


Now the easy part…. stuff those pepper halves with the beef filling mixture.  I crammed it in because I only used 3 peppers instead of the 4 in the original recipe.


Topped them with lots of grated cheese….


And then baked them with the recipe I will posting in Part #2!
