An old friend of ours used to always make a German Potato Salad that Chris professed to love. I have never attempted it myself but I decided to make it for our Father’s Day dinner. I found many recipes online but when I found one that I could make in the crock pot, I just had to try it.
I did change things up a little from the recipe I found but for the most part followed the recipe, being my first time making it!

I started by slicing the potatoes, instead of cubing them. Just because I remembered, or think I remember, our friend doing hers in slices.
I put about 6 slices of bacon in the frying pan and cooked it up crisp. (The recipe only called for 3 slices of bacon, but it’s bacon, and “the boys” love their bacon so I doubled up on it)
When the bacon was done, I removed it to paper towels to drain, drained all but a Tbsp. or two of grease and threw the onions in the grease to soften and caramelize a bit.
Once the onions looked good, I mixed in the flour, mustard, salt, pepper, and vinegar and cooked it over medium heat for just a minute or two until the “sauce” had thickened with the onions.
It looks kind of gross but it sure smelled good. Chris even popped his head in and said that whatever I was cooking sure smelled tasty.
I crumbled the bacon and sprinkled it on the sliced potatoes, along with the chopped fresh dill.
I poured the sauce onto the potatoes and bacon.
Mixed it all up and turned on the crock pot. The recipe says to cook it on Low heat for 6 to 8 hours.
