“Crack” Potatoes

Yesterday was a bad day, and today isn’t shaping up to be much better, but I did manage to make dinner lol.  It certainly wasn’t anything gourmet but enough to fill hungry bellies and taste good.  I just poured Teriyaki sauce on some chicken thighs and made my version of “Crack” Potatoes…  add some veggies and some of the Easy Skillet Bread I made the other night and that was dinner.

A few years ago, I kept seeing something called Crack Potatoes on Pinterest (of course) and decided to try it.  The first version I made had too much Ranch flavouring.  It was good but too Ranch-y lol.  I decided to mix up my own version that wouldn’t have so much dry ranch dressing mix in it.

Here are my ingredients… it doesn’t take many.

I just mix everything together in a large bowl.

Until everything is well distributed….

And spread it into the prepared 9 x 13 pan.

I bake it at 375 degrees for about 45 minutes (we like it crispy, you can cook it until it is just starting to brown if you don’t want it that crispy), until it is browned and getting crispy on top.

Mix it up a little in the pan and serve. Easy and delicious!

Recipe

“Crack” Potatoes

Preparation Time: 10 minutes  Baking Time: 30 – 45 minutes  Servings: 4 – 6

Ingredients

  • 1 bag frozen shredded potatoes
  • 1 1/2 cups grated cheese
  • 1/2 cup cooked bacon bits
  • 3/4 cup sour cream
  • 3/4 cup Ranch Dressing

Directions

  1. Preheat oven to 375 degrees.  Generously grease 9 x 13 pan.
  2. Mix all ingredients together in a large bowl until well blended.
  3. Spread mixture into prepared pan.
  4. Bake at 375 degrees for 30 – 45 minutes, until desired crispiness.
  5. Mix in pan and serve.
