Yesterday, with still feeling crappy, I threw a pot of stew in the crock pot to make for a quick and easy dinner. This would have been great if I had remembered to turn on the crock pot!!!! I went to make sure the veggies were all cooked around 4 pm and noticed the pot was cold. First I thought something was wrong with it… then I realized I had plugged it in but hadn’t actually turned it on. Not a pleasant surprise! So, I turned it on high and hoped it would be ready for a later dinner! Surprisingly enough, the stew was ready in time for a 7:30 meal. Phew!
THEN…. up at 5 am this morning, my normal wake up time…. I let one of the dogs out to do his “business” and he came back in reeking of skunk!!!! Not a good start to the day but I suppose being Friday the 13th, it could be considered expected! Thankfully it wasn’t a full on strike like they normally get but it still smells of skunk in the house!
I was really hoping we would get through one summer/fall season without at least one of them trying to make friends with the “black cat with the white stripe!” We have a black cat and I always wonder if that’s who they think they are visiting… it’s that or our dogs really aren’t that bright??? Hmm….
Back on topic…. below are the steps I took to make our Hearty Beef Stew. I hope you enjoy the recipe!
There are the ingredients I used. You can leave out or add any vegetables you like but these are the ones we generally use.
You will see in the picture above that I have already diced the stewing beef I bought, removing any big sections of fat.
I put the diced stewing beef into my frying pan with olive oil, garlic powder and thyme and cook it until it is fully browned and almost fully cooked through.
While the beef was browning I started washing, peeling and dicing/slicing up the vegetables and putting them in the bowl of my crock pot with about a tbsp. of dried parsley.
When the beef was done, I added it to the bowl of my crock pot with the vegetables.
Mixed the beef broth with corn starch and added it to the bowl.
Now normally, I let this cook for about 6 – 8 hours on low but as mentioned above, some dumbass forgot to the turn the crock pot on… so this time I cooked it on high for about 3 hours and surprisingly enough, it was done and tasted fine.
Note: If you need/want to thicken it more, you can mix in about a quarter cup of additional corn starch mixed into about a half cup cold water and add to stew.
A nice bowl of stick to your ribs stew on a cold, dreary day!
Hearty Beef Stew
Preparation Time: 30 minutes Cooking Time: 3 – 8 hours (depending on temp) Servings: 6 – 8
- 1 lb. stewing beef
- 3 – 4 medium potatoes
- 1 medium onion
- 2 – 3 carrots
- 3 – 4 parsnip
- 5 – 6 whole mushrooms
- 2 stalks celery
- 2 tbsp. garlic powder
- 1 tsp. thyme
- 1 tbsp. dried parsley
- 3 – 4 cups beef broth
- 2 tbsp. olive oil
- 1/2 cup corn starch
- Dice stewing beef.
- Add to frying pan with olive oil, garlic powder and thyme. Cook until browned and almost cooked through.
- Wash, peel and slice/dice vegetables and place in bowl of crock pot.
- Add browned beef to vegetables in bowl.
- Mix together corn starch with beef broth until blended, then add to beef and vegetables.
- Stir to combine.
- Cook on low heat for 6 – 8 hours or on high heat for 3 – 5 hours, until vegetables are fork tender.
- If necessary, mix in a 1/4 cup of corn starch mixed with 1/2 cup cold water to thicken.
- Serve immediately. Great with a loaf of freshly baked bread!
