Apple Cranberry Crisp

When I have leftover Cranberry Sauce from Thanksgiving, Christmas or whenever I love to add it to my Apple Crisp recipe.  The tartness of the cranberries are the perfect addition to apple crisp and a favourite dessert here!

Here are the ingredients… well, hopefully all of them this time!

I start by washing, peeling and slicing the apples.

I add the cinnamon, cranberry sauce, brown sugar and butter/margarine to the apples and mix well.

I microwave it on high heat for 3 – 5 minutes, until the apples are just starting to soften.

I then add 1/4 cup of flour, mix it in and then pour the apple mixture into my prepared pan.

In another bowl, I mix together the oatmeal, brown sugar, cinnamon and then add the melted butter/margarine.

And mix it until crumbly.

I sprinkle it over top of the apple mixture.

And bake it at 350 degrees for about 45 minutes until the topping is browned and starting to get crisp.

Serve alone or with a scoop of vanilla ice cream!

Recipe

Apple Cranberry Crisp

Preparation Time: 20 minutes  Cooking Time: 45 minutes  Servings: 4 – 6

Ingredients

  • 8 apples
  • 3/4 cup cranberry sauce
  • 1/2 cup brown sugar
  • 1 tsp. cinnamon
  • 1/4 cup butter/margarine, cubed
  • 1/4 cup flour
  • 1 1/2 cups oatmeal
  • 1/4 cup flour
  • 1/2 cup brown sugar
  • 1 tsp. cinnamon
  • 1/4 cup melted butter/margarine

Directions

  1. Preheat oven to 350 degrees.  Grease baking pan.
  2. Wash, peel and slice apples into microwave safe bowl.
  3. Add first amounts of brown sugar, cranberry sauce, cinnamon and cubed butter/margarine and mix well.
  4. Microwave apple mixture on high for 3 – 5 minutes until apples are just starting to soften.
  5. Mix in first amount of flour and mix until combined.
  6. Pour apple mixture into prepared pan.
  7. In another bowl, mix together oatmeal, second amounts of flour, brown sugar and cinnamon.
  8. Add melted butter/margarine and mix until crumbly.
  9. Sprinkle over top of apple mixture, pressing down lightly.
  10. Bake at 350 degrees for 45 mintues, until topping is browned and starting to get crisp.
  11. Serve alone or with a scoop of vanilla ice cream!
