Italian Meatloaf….

… at least that’s what I am calling it. And I have to say, it was a big hit with “the boys!”

I wanted to try something  different with meatloaf instead of making the same kinds over and over and I am glad I did because they loved it!

Here is what I used to make it.

I mixed everything together in a large bowl, except for the tomato sauce and grated cheese.

When it was thoroughly combined, I pressed it into my baking pan.  I used a 6 x 9 pan but it can be done in an 8 x 8 or 9 x 9 pan also, as long as it has deep sides.

I cooked this at 375 for 30 minutes, removed it from the oven, drained it and then poured the tomato sauce on top first…

… and then the grated cheese, second amounts of parmesan and oregano.

I cooked it for an additional 20 minutes at 375 until the cheese was browned and starting to form a “crust” on top.

Then I cut it into squares and served it.

Recipe

Italian Meatloaf

Preparation Time: 10 minutes  Cooking Time: 50 minutes  Servings: 4

Ingredients

  • 1 lb. lean ground beef
  • 1 cup seasoned bread crumbs
  • 2 large eggs
  • 1/4 cup parmesan
  • 1 tsp. oregano
  • 1 tsp. garlic powder
  • 1 cup tomato sauce
  • 1 1/2 cups grated cheese
  • 1/4 cup parmesan
  • 1 tsp. oregano

Directions

  1. Preheat oven to 375 degrees.
  2. Combine first 6 ingredients in a large bowl.  Mix until thoroughly combined.
  3. Press into 6 x 9 baking pan.
  4. Bake at 375 degrees for 30 minutes.
  5. Remove from oven and drain any grease from pan.
  6. Spread tomato sauce evenly across meatloaf.
  7. Toss grated cheese on top of sauce.
  8. Finish by sprinkling second amounts of parmesan and oregano on top of grated cheese.
  9. Bake an additional 20 minutes at 375 degrees.
  10. Cut into squares and serve.
