Tater Tot Enchilada Casserole

Saturday night for dinner I tried a recipe that I found here:

It sounded interesting and it definitely got an all thumbs up from “the boys!”

Here are the ingredients I used to make it. The sour cream was forgotten when I took the picture but Chris said it’s a must!

I made mine a bit different than the recipe but it’s pretty close. The only differences are where I used the microwave to brown the ground beef and I precooked the tater tots at 400 degrees for about 15 minutes so they would be a bit crispier.

So… I started by browning the ground beef in the microwave and then added the garlic, green onions and the fajita seasoning.

I mixed it up and then added the enchilada sauce.

I mixed that and then stirred in the precooked tater tots.

I sprinkled the grated cheese on top and then a few more chopped green onions.

I baked it at 350 degrees for about a half hour.

And served it with a dollop of sour cream and some diced tomatoes and green onions. And they LOVED it!
