Sunday Morning Sheet Pan Breakfast

On Sunday morning I made a nice “sheet pan” breakfast for “the boys.”  It was nice only having the one pan when it came time to deal with the dishes and they really enjoyed it.  When I put it on the plates it actually ended up looking something like a face… totally unintentional but kind of fun! Dillon said I was copying his Creepy Smiley Face pizza.



Here are the ingredients I used.


I started off by mixing the hash browns with the melted margarine, olive oil, parmesan, garlic powder and Italian seasoning.


I spread it evenly onto my prepared cookie sheet.


Sprinkled it with grated cheese.


And baked that for about 20 minutes at 400 degrees.

I removed it from the oven and made 4 little “wells” in the hash browns.


I took 2 slices of bacon for each “well” and shaped them into a circle in the well.


I cracked the 4 eggs into the wells. I broke 2 of the yolks, on purpose, Dillon doesn’t like runny yolks lol!


I sprinkled the eggs and hash browns with parmesan and a bit of pepper and just placed the rest of the bacon in the centre of the pan to cook.


And cooked it for an additional 15 minutes, until the eggs were cooked.


And then, unintentionally, served it into the shape of faces lol.



Sunday Morning Sheet Pan Breakfast

Preparation Time: 15 minutes  Cooking Time: 35 minutes  Servings: 2 – 4


  • 1 bag shredded potatoes, thawed
  • 3 tbsp. melted butter/margarine
  • 1/4 cup grated parmesan
  • 2 tsp. garlic powder
  • 1/2 tsp. Italian seasoning
  • 2 tbsp. olive oil
  • 4 eggs
  • 8 – 12 slices of bacon
  • 1/4 cup grated parmesan
  • 1 cup grated cheese
  • pepper to taste


  1. Preheat oven to 400 degrees. Grease cookie sheet
  2. In large bowl, mix together shredded potatoes, melted margarine, first amount of parmesan, garlic powder, Italian seasoning and olive oil until potatoes are evenly coated.
  3. Spread potatoes evenly in prepared pan.
  4. Sprinkle with grated cheese.
  5. Bake at 400 degrees for 20 minutes, or until potatoes are starting to brown around the edges.
  6. Make 4 “wells” in the potatoes.
  7. Shape 2 slices of bacon around outside of wells, to form circles.
  8. Crack an egg into each well.
  9. Sprinkle eggs and potatoes with second amount of parmesan, and pepper (optional).
  10. Return to oven at 400 degrees for 15 minutes, until eggs are cooked.
  11. Serve and enjoy.
