Balsamic Potatoes and Asparagus

To go with the Sweet & Spicy Pork Tenderloin I made the other day for dinner, I made these to have with it. This is a simple recipe, but with lots of flavour and it would be a good accompaniment to any meal.

Here are my ingredients.

I diced my potatoes, into about 1 inch pieces, then added them to a large bowl with the olive oil, balsamic vinegar, garlic and salt and stirred to coat.

I placed them in my prepared baking pan and roasted them at 400 degrees for about 30 minutes.

While they were roasting, I cut the asparagus into about 2 inch pieces.

I removed the pan from the oven and stirred in the asparagus, sprinkled it with pepper and returned it to the oven for another 20 minutes.

And here they are, fresh from the oven, waiting for dinner to be served.

Recipe
Balsamic Potatoes and Asparagus

Preparation Time: 15 minutes Cooking Time: 50 – 60 minutes Servings: 4

Ingredients

  • 8 medium potatoes
  • 1 bunch asparagus
  • 2 tbsp. olive oil
  • 4 tbsp. balsamic vinegar
  • 2 tsp. garlic powder
  • pepper to taste

Directions

  1. Preheat oven to 400 degrees. Generously grease a 9 x 13 baking pan.
  2. Cut potatoes into 1 inch pieces.
  3. In a large bowl, toss the potatoes with the oil, balsamic vinegar and salt.
  4. Bake at 400 degrees for about 30 minutes.
  5. Cut asparagus into 2 inch pieces.
  6. Remove pan from oven and stir in the asparagus.
  7. Return to oven for an additional 20 minutes, until potatoes are tender and nicely browned.
