Chris loves Date Squares and while it is normally something I only bake at Christmas time, I made him a batch on the weekend for lunch box snacks.
Date Squares are easy to make and taste delicious, regardless of what time of year you make them!
These are the ingredients I used.
To start with I made the date filling. I put the dates, water and brown sugar in a medium sized pot.
And cooked it on the stove, over medium high heat, until the dates were cooked enough I could mash them. (yes, I do know it looks pretty nasty lol)
While the dates were cooking I started the rest of the recipe.
To the bowl of my stand mixer, I added the flour, salt and baking soda, and pulsed just to blend it.
I added the cold butter/margarine to the flour mixture.
And mixed it until it resembled coarse oatmeal. I added the brown sugar and oatmeal.
And blended it again until well mixed and crumbly.
Next I pressed half of the mixture into the bottom of my baking pan.
Spread the mashed dates on top evenly.
And then added the remaining oatmeal mixture on top and pressed it firmly.
I baked it at 350 degrees for about 25 minutes, until browned.
Once fully cooled, I removed from the pan and cut into squares.

- 1 package dates
- 1 tbsp. brown sugar
- 1/2 cup water
- 1 cup flour
- 1/2 tsp. baking soda
- 1/2 teaspoon salt
- 1/2 cup butter/margarine
- 1 cup brown sugar
- 2 cups oatmeal
- Preheat oven to 350 degrees. Line baking pan (9 x 9) with parchment paper.
- Add dates, brown sugar, and water in a medium pot.
- Bring to a boil over medium high heat, lower to simmer and let cook, until dates are soft enough to be mashed.
- In bowl of stand mixer, add flour, baking soda, and salt. Pulse to blend.
- Add cold butter/margarine and mix until mixture resembles coarse oatmeal.
- Add brown sugar and oats, mix until crumbly.
- Press half of crumb mixture into bottom of prepared baking pan.
- Spread date filling over bottom layer evenly.
- Sprinkle remaining oat mixture over date filling.
- Press into date filling to even out.
- Bake at 350 degrees for 25 minutes.
- Allow to fully cool before cutting into squares.
