Cheesy Dill Pierogi Casserole

We love pierogi.  Our usual method is to make Loaded Pierogi but I wanted to try something different when I made them last time.  No, I did not make the actual pierogi… one of these days I will make a batch to freeze again… but they were still delicious cooked this way!

Crystal Lamp – Repurposed

Quite a while back I bought a pretty lamp through one of the auction sites I like to frequent for about $2.00. I knew I wanted to put it in the craft room but I hadn’t really decided if I was going to leave it as is, or “embellish” it lol.

I’m sure you can guess which direction I went in!

Because it was an old lamp, Chris rewired it for me before I got started. Thank you Chris lol!

I had some really nice beaded pearl “ribbon” that I thought would be perfect for the lamp, along with some off white lace, pink ribbon, a new lamp shade and my dreaded glue gun!

I started by glueing strips of the beaded pearl ribbon around each of the metal bands on the lamp.

Then I moved on to the lamp shade.

The lace I had turned out to be the perfect width for the lamp shade!

I glued it around the top of the shade, starting and stopping at the seam at the back of the shade.

Then glued a longer strip of the beaded pearl ribbon around the top, covering the edge of the lace and again starting and stopping at the seam at the back.

I put the shade back on the lamp so I could make sure it was centred before glueing a small pink bow near the top of the shade.

And this is my girly repurposed lamp for the craft room!!!

Crispy Roast Potatoes

Who doesn’t love roast potatoes? Especially when they are crispy on the outside and nice and soft on the inside?

These potatoes take two steps to make but using the microwave for the first step speeds up the process!

Here are the ingredients I started with.

I began by washing, peeling and cubing the potatoes, then placing them in a large microwave safe bowl.

I covered the bowl tightly with plastic wrap and microwaved them on high heat for about 10 minutes, removing to stir the potatoes at the halfway point.

The potatoes should be starting to get a sort of mushy look on the outside.

Next I added the olive oil, garlic powder and onion powder to the bowl.

And stirred it to completely coat all of the potatoes.

I spread them in a single layer on my parchment paper lined cookie sheet.

And baked them at 375 degrees for about 25 minutes, flipping them part way through, until they were brown and crispy.

Don’t they look delicious??

Crispy Roast Potatoes

Preparation Time: 15 minutes Baking Time: 25 minutes Servings: 2 – 4

Ingredients

  • 6 – 8 medium potatoes
  • 1/2 cup olive oil
  • 2 tsp. Garlic powder
  • 2 tsp. Onion powder

Directions

  1. Preheat oven to 375 degrees. Line cookie sheet with parchment paper.
  2. Wash, peel and cube potatoes and place in large microwave safe bowl.
  3. Cover tightly with plastic wrap.
  4. Microwave potatoes on high heat for about 10 minutes, stirring at halfway point.
  5. Add olive oil, garlic powder and onion powder and stir to evenly coat all the potatoes.
  6. Spread potatoes in a single layer on the prepared cookie sheet.
  7. Bake at 375 degrees for about 25 minutes until potatoes are brown and crispy.

Meatloaf “Cupcakes”

When I was talking to Dillon one day about trying to make some “muffin tin” recipes, his first idea was some sort of meatloaf variation…. Meatloaf Cupcakes.  He asked me if this was something I could make.  I told him I could, I would just have to figure out the “logistics” of making them lol… What would I use for the “icing” and things like that.

Several months later, and during a week when I am completely exhausted, I decided to try them.

This might seem like a really good “Kid’s Meal,” but both Dillon and Chris really enjoyed them!

Giant Skillet “Brookie”

Yesterday must have been a “Skillet” cooking day.  I made bread for dinner in the skillet and then made this Giant Skillet “Brookie” recipe for dessert.

I am not sure it actually is a recipe, it is more a collaboration of two of our favourite treat recipes… My Favourite Chocolate Chip Cookie Recipe and my favourite Brownie recipe, combined to make this delicious Brookie!

Herb & Garlic Olive Skillet Bread

I love trying new bread “concoctions” to have with our dinners. Once I figured out I could make bread all sorts of different variations have come to mind. I remember buying a loaf of a black olive bread at a bakery once that was absolutely delicious. I didn’t have any black olives on hand so I tried making a bread with stuffed green olives, garlic and herbs.

The bread has a lot of flavour and is so soft and tasty on the inside. Definitely a bread I will probably make again and again!
