Crock Pot Taco Casserole

Now, I call this a casserole but it really has more of a chili consistency than casserole but I’m still sticking with that name. As we talked about last summer with our Who says Crock Pots are only for Winter post, crock pot recipes are great for when you don’t feel like bbqing and it’s too hot to turn on the oven, while still getting a proper meal!

Creamy Macaroni Salad

Here is another one of the salads I made to have with dinner on Sunday.  A nice cool side dish for a very hot day!  It pairs great with any dinner but especially when you are cooking on the grill!

Easy Fresh Fruit Salad

I’m back…. we got a bit busy outside… yes, I was gardening again but I also ended up not feeling well because of the heat and my own stupidity of not wearing a hat out when I was doing my planting.  I gave in and bought an ugly but effective hat from the dollar store so hopefully I can avoid this in future.

The weather has been so hot the past week that I figured it was the perfect time to make a few salads… one being this refreshing fresh fruit salad!

Garlic Buttermilk Drumsticks

Since we had a bit cooler day on Tuesday, I made some chicken drumsticks in the oven.  They were marinated for about 6 hours in the fridge in a garlicky, buttermilk mixture before baking until golden brown! It was something both “boys” thoroughly enjoyed!

Sesame Carrot Salad (Yes, spriralized)

I have been having a lot of fun “playing” with my new Spiralizer Dillon bought for me.  There are so many different ways to prepare vegetables with it, this is another one of those recipes!

We had this the other night with BBQed pork chops and Chris’ Favourite Potatoes!

Fruit “Filled” Muffins (Copycat “Fruit Explosion Muffins”)

I have a favourite muffin I get whenever I am at a certain coffee shop.  They do not call it fruit filled muffins, it has “explosion” in the name.

When I was making some lunch box treats the other day I thought I would like to try making my own version of these muffins so we can have them more often.  While mine aren’t as “pretty and perfect” looking as this certain coffee shop, the taste is just about bang on!

Maple Bourbon BBQ Sauce

Well, Maple Bourbon enhanced BBQ sauce lol.  I took some plain BBQ sauce and turned it into a bit fancier version.  It is great on steaks…. which we used it on the first night, pork chops… second night lol and it will be great on chicken, turkey, sausages… you name it!  A great way to up the BBQ sauce game!

Did I mention how easy this is as well?  Throw all the ingredients in a large mason jar, shake and it’s done!
