Freezer Meals – Prepping for Baby Time! – PT. 2

These little feet were eager to make their appearance in the world!

 
It’s been two months since I wrote my Freezer Meals – Prepping for Baby Time! post.

At that time, my due date was fast approaching (10 days to go) and I wanted to be in the kitchen less and less. My feet (among every other part of my body) were swollen and I was exhausted – heading into the kitchen to cook something (and especially something healthy) was not appealing. I wanted to have healthy freezer meals prepared to avoid the temptation of fast food – and I did! I had meals prepared for the remaining two weeks of my pregnancy and the first week back home…

Spiralized Potato Side Dish

Yes, again with the Spiralizer lol! I can’t help myself.  There are so many different recipes that can be altered to use spiralized vegetables with…. fruits too!

This time I made a potato side dish with lots of melted cheese, onions and garlic. And it was delicious! It is very similar to the Zucchini Casserole I made the other day but substituting the thyme for basil and using potatoes instead!

Grilled Pork Chops with Balsamic Dijon Marinade

I prepared this for dinner last night.  I started grilling them but thankfully Chris finished. I love to cook but for some reason I hate Bbqing.  I love preparing things to cook on the grill but not the actual grilling… go figure lol!

Both Chris and Dillon ate 2 big pork chops with this marinade and Chris said they cooked well in it and the flavour carried through after grilling.  Maybe I will have to try this marinade on chicken sometime soon!
