Potatoes & Veggies on the Grill

There are so many ways you can cook your potatoes and veggies while you are grilling that save having to cook them inside, especially when it’s hot and humid outside.

This recipe is a simple variation for cooking them on the grill. What is your favourite way to grill potatoes and veggies???



These are the veggies and ingredients I started out with.


I washed, peeled and chopped/sliced up the potatoes and placed them in a large freezer bag.

Note: I usually partially cook my potatoes in the microwave on high heat for about 6 – 8 minutes, depending on the size of the potatoes, before chopping them up and adding them to the rest of the veggies.


I added about 3 tbsp. olive oil, 3 tsp. garlic powder and 1 tsp. thyme to the bag and shook and smushed it around until everything was evenly coated.


I split the potatoes and veggies between two, slightly greased, aluminum pans…


Covered them with aluminum foil.


And cooked them on the top grill shelf, over medium heat, for about a half hour…. and out came some delicious potatoes and veggies to have with dinner!

  1. My mom used to do this with potatoes, green peppers, and onions for cookouts. There were never any veggies left over. Back then, when she did this, she just wrapped the chopped veggies up in aluminum foil.
