Yesterday was actually a cooler, dreary sort of day. Not a day that you particularly feel like cooking, let alone BBQing…. so I made a one pan dinner for the boys and it was a big hit. I love one pan dinners…. only one dish once it’s oven ready and if you are feeling as lazy as I did yesterday that one pan can be a recyclable aluminum pan lol!

Here are the ingredients I used to make this recipe.
I started by washing, coring, slicing, cubing all the vegetables and placing them in the baking pan I was using with the pork tenderloin, sprinkling a little salt and pepper on the pork.
In a large measuring cup, I whisked together the apple juice, apple cider vinegar, Dijon mustard and poultry seasoning.
I poured this mixture over the pork and veggies, making sure to cover everything.
I covered it with foil and baked it at 375 degrees for one hour then uncovered it and continued baking for an additional 30 minutes until the tops of the veggies and the pork were browned. You can just cook it on a high broil for about 5 – 10 minutes if you wanted as well.
I let it stand for about 5 minutes and then sliced the tenderloin and served it with the baked veggies!

Apple Dijon Pork Tenderloin (and Veggies)
Preparation Time: 10 minutes Baking Time: 65 – 75 minutes Servings: 2 – 4
Ingredients
- 1 pork tenderloin
- salt and pepper, to taste
- 3 or 4 medium red potatoes, cubed
- 2 apples, cored and sliced
- 1/2 cup coarsely chopped red onion
- 1/2 green pepper, seeded and sliced
- 1/2 cup sliced mushrooms
- 1/2 cup apple juice
- 2 tbsp. apple cider vinegar
- 3 tbsp. Dijon mustard
- 1 tsp. poultry seasoning
Directions
- Preheat oven to 375 degrees.
- Wash, core, slice and cube vegetables and place them in the baking pan with the pork tenderloin, arranging veggies around pork..
- Sprinkle a little salt and pepper on the pork, optional.
- In a large measuring cup, whisk together apple juice, apple cider vinegar, Dijon mustard and poultry seasoning
- Pour mixture over pork and veggies and cover with foil.
- Bake covered at 375 degrees for one hour.
- Remove foil and bake for an additional 30 minutes at 375 degrees or on high broil for 5 – 10 minutes, until tops of veggies and pork are browned.
- Let stand for 5 minutes then slice pork and serve with veggies.
