INSTAPOT Honey Garlic Chicken

Earlier this week I decided I wanted to try something else in the Instapot for dinner.  I knew I had a package of chicken breasts in the freezer so I grabbed them and made this delicious Honey Garlic Chicken that I served over rice, well, rice for Chris…. Pasta for Dillon lol!

No matter what it was served on this was a definite clean their plates kind of meal!  They both really like that sort of meal!

Pork Tenderloin with Gravy

Again, this isn’t a summer meal but I cooked it anyway.  I so prefer cool/cold weather cooking… casseroles, slow cooked roasts, and that sort of thing.  There are so many comfort foods that are more suited for the cooler weather and I can’t wait to get back to that kind of cooking.

While the crock pot produces some wonderful meals without heating up the kitchen, I find you still don’t feel like eating anything that “heavy” during the summer months. I think this recipe qualifies as that type of meal but it didn’t stop Chris and Dillon from digging in!

I use this same recipe to cook a beef roast because it always comes out tender and very flavourful.

Tulle Toy Hammock

With all the toys and stuffies Kim received through baby showers and baby gifts, she needs somewhere to store them all. She sent me a few pictures of the type of toy hammock she would like, so I bought the tulle and other things I was going to need to make one for her/my granddaughter!

I used 58″ tulle so there will be lots of room for her stuffies.  I only had a few stuffies laying around the house so you can’t really see how well it works.  I will try to get Kim to take a picture once it’s up at their place to show better how it works!

Feta & Garlic Burgers

Here is another easy homemade burger recipe.  I have been having fun experimenting with different combinations since I got the Patty Press at Christmas.  There are just so many different ways to make a burger…. what type of meat, cheese, all the add ins… the possibilities are endless! This is just one of the combinations I made for dinner the other night!

I served them with some crinkled dollar chips I made in the air fryer!

Ham & Cheese Crescent Roll Quick Lunch

I almost didn’t put the word “Quick” in the title but these just happen to also fall under that category.

I was trying to decide what to make for lunch yesterday.  I checked the fridge and saw I still had a few tubes of crescent rolls and it blossomed from there. I pulled out the crescent rolls, some ham, cheese, mustard and mayonnaise (because I couldn’t decide on one over the other) and then decided to go one step further and brush them with melted margarine and garlic to finish them off.

They were a hit!  Dillon ended up eating 5 or 6 of them and Chris the rest! I will definitely make these again but maybe switch it up with a different deli meat and cheese!

Quick Steak Rub Mix

Yes… I know… a lot of my recipes have had the word “Quick” in them lately (as will the next post), but that seems to be the name of the game this week.  I don’t know if it’s just dealing with the loss of our well loved dog Kita or not but I have not been very motivated this week.

This is a recipe for a very flavourful rub to use on steak, or I suppose any other type of meat on the BBQ.  When I was grocery shopping on Friday sirloin steaks were on for a really good price so I picked up 4 of them.  I wasn’t sure if the boys would eat them all in one sitting…. but they did lol… I guess I shouldn’t have been that surprised.  BBQ steak is one of Chris’ favourite meals… throw in a baked potato or two with sour cream, some mushroom and onion cooked on the BBQ and he is right in his dinner element!

Chris told me that steaks cooked in this rub don’t even require any type of BBQ sauce or steak sauce, they are awesome as they are!

(This recipe would also be great made in bulk and placed in nice jars to gift)

Quick (Cheater) Calzones

I call them Cheater Calzones because I didn’t make the dough.  I cheated and bought premade pizza dough to make these because it was a last minute decision to make them at the grocery store.  I suppose they could also be called lazy ones because I just didn’t feel like making the pizza dough when I made them! I am not even sure this qualifies as a recipe, it’s more of an assembly thing than recipe but I am posting it anyways!!!

Dillon asked me what a calzone was… I told it’s pretty much just a pizza folded in half, sealed and cooked lol!

No matter that I took the lazy/cheater route, they were delicious and can be made with whatever fillings/toppings you like.
