Feta & Garlic Burgers

Here is another easy homemade burger recipe.  I have been having fun experimenting with different combinations since I got the Patty Press at Christmas.  There are just so many different ways to make a burger…. what type of meat, cheese, all the add ins… the possibilities are endless! This is just one of the combinations I made for dinner the other night!

I served them with some crinkled dollar chips I made in the air fryer!

Ham & Cheese Crescent Roll Quick Lunch

I almost didn’t put the word “Quick” in the title but these just happen to also fall under that category.

I was trying to decide what to make for lunch yesterday.  I checked the fridge and saw I still had a few tubes of crescent rolls and it blossomed from there. I pulled out the crescent rolls, some ham, cheese, mustard and mayonnaise (because I couldn’t decide on one over the other) and then decided to go one step further and brush them with melted margarine and garlic to finish them off.

They were a hit!  Dillon ended up eating 5 or 6 of them and Chris the rest! I will definitely make these again but maybe switch it up with a different deli meat and cheese!

Quick Steak Rub Mix

Yes… I know… a lot of my recipes have had the word “Quick” in them lately (as will the next post), but that seems to be the name of the game this week.  I don’t know if it’s just dealing with the loss of our well loved dog Kita or not but I have not been very motivated this week.

This is a recipe for a very flavourful rub to use on steak, or I suppose any other type of meat on the BBQ.  When I was grocery shopping on Friday sirloin steaks were on for a really good price so I picked up 4 of them.  I wasn’t sure if the boys would eat them all in one sitting…. but they did lol… I guess I shouldn’t have been that surprised.  BBQ steak is one of Chris’ favourite meals… throw in a baked potato or two with sour cream, some mushroom and onion cooked on the BBQ and he is right in his dinner element!

Chris told me that steaks cooked in this rub don’t even require any type of BBQ sauce or steak sauce, they are awesome as they are!

(This recipe would also be great made in bulk and placed in nice jars to gift)

Quick (Cheater) Calzones

I call them Cheater Calzones because I didn’t make the dough.  I cheated and bought premade pizza dough to make these because it was a last minute decision to make them at the grocery store.  I suppose they could also be called lazy ones because I just didn’t feel like making the pizza dough when I made them! I am not even sure this qualifies as a recipe, it’s more of an assembly thing than recipe but I am posting it anyways!!!

Dillon asked me what a calzone was… I told it’s pretty much just a pizza folded in half, sealed and cooked lol!

No matter that I took the lazy/cheater route, they were delicious and can be made with whatever fillings/toppings you like.

Quick & Easy Crescent Roll Taco Bake

With emotion still running pretty high in our household, dinner had to be something quick and easy to make.  I had taken some ground beef out to thaw the day before but ended up making some Potato Soup instead so I had to come up with something to do with it.  I knew I had taco seasoning in the cupboard and crescent rolls in the fridge so this is what I came up with.

It got rave reviews from everyone and with only two of them eating it I have enough to freeze for another meal!!!  Always a bonus!

INSTAPOT Cheesy Potato Soup

Yesterday was a very bad day.  We had to have our dog of 12 years put to sleep.  As all of you dog lovers out there, you know they are more than just dogs… they are family. Kita was such a good dog, right from the start.  She was a rescue dog we got as a puppy and was never anything but a loyal, well behaved dog that loved everyone she met. It didn’t matter who showed up at our house, in Kita’s mind, they were there to visit her!

It is going to be very difficult not having her in our lives everyday but as Kim told me last night… Kita had a very good life, especially considering her beginnings, and we have a lot of memories of her to comfort us once the initial grief starts to subside. Hopefully Kita is now somewhere with no pain and she can go to the L-A-K-E every single day and play with the ducks!!!

I could write a huge post singing her virtues, although not without a lot of Kleenex,  but I still wanted to share this soup recipe I made last night in my INSTAPOT.  None of us felt like eating, but knew we should.  Potato soup is my go to comfort food and that is exactly what we needed last night.  It is the favourite thing my grandmother makes for me when we visit and whenever I make it I can feel her right alongside of me cooking!

Peanut Butter Chocolate Chip Cookies

Everyone in this household loves peanut butter cookies…. even Dillon… who for some reason doesn’t generally like peanut butter.  I don’t think he’s had a peanut butter sandwich since he was in his early school days… but peanut butter cookies he will devour… go figure!

What could be better than a fresh batch of peanut butter cookies?  How about adding some chocolate chips into the mix???

Zucchini Relish

With having those gigantic zucchini from my garden I was struggling with what I wanted to make with them.  My mother-in-law suggested zucchini relish because she loves it…. so that’s what I made!  When I grated those zucchini it was hard to believe that I ended up with 16 cups of zucchini!!!  I only needed 12 cups for my recipe, so I am trying to decide now if I want to freeze what’s left over for another day or make something else.

In some places, zucchini relish is considered a “hot dog” relish.  I’m not sure why but I just call mine by the very bland “Zucchini Relish.”

Pumpkin Spice Cinnamon Rolls

Need I say more than what the title says lol.  I know some of you think it’s too early for pumpkin recipes…. not naming anyone lol… but I think we should be able to eat anything pumpkin all year round! I love just about anything pumpkin, right down to roasting the seeds!  There is nothing quite like the smell of something pumpkin spice baking in the oven!  That is one of my comfort smells!

Apparently it is also so for Dillon because I almost had to take a wooden spoon to him to keep him from taking the whole plate of warm rolls and eating all of them lol!
