Lemon Cranberry Muffins

I don’t know about you, but I love the combination of lemon and cranberry.  The tartness of the flavours together are delicious.  I had some fresh cranberries and thought this would be a perfect way to use them… these are a favourite of everyone in this house!

(The muffins didn’t rise as much as usual… maybe I need to replace my baking powder… but they more than make up for it in taste!)

Fast & Delicious Tartar Sauce

No, this isn’t really much of a recipe but if you want to add some delicious tartar sauce to whatever kind of fish you are eating… this is the one.  I made some on Sunday to go with my lazy ass dinner plans lol.  It was a busy weekend, trying to get inside and outside of the house ready for winter, so when it came time for dinner on Sunday…. I wanted easy but I didn’t want to start using my Make Ahead Meals yet.  Thankfully I had the foresight to buy a box of frozen fish burgers when I did the grocery shopping…. between them, some homemade tartar sauce and some air fryer French fries… we had dinner.  While it wasn’t as healthy as normal I thought we could get away with it using the air fryer! The only problem was that we were all so hungry from our busy day that I didn’t get the chance to take a picture of the fish burgers lol!

The next few weeks are going to be just as busy… if not worse.  And while I will try my best to maintain our daily posts, there may be a few days in there where I am unable… but I will be back lol.  Once I am done retiling the bathroom floor, redoing the backsplash in my kitchen, reorganizing/painting the laundry room, redoing the storage area in the basement and hopefully finally getting back to the craft room makeover as well as prepare for Christmas. Quite the To Do list, isn’t it lol?  Wish me luck?

How Our Blog Started

Our blog started mostly because of my car accident/brain injury. Kim knew I was bored out of my skin and needed something to do.  I had been considering starting a blog before and the amount of time I have been off work recovering gave me the perfect opportunity to start.

Kim and I decided to do a Mother/Daughter blog to share our love of cooking, crafting, home décor, tips and anything else we could think would be interesting to share with other people! The feedback we have received for our efforts has been amazing…. as is the blogging community in general!

Cheese Stuffed Spicy Meatballs

I have to admit…. these are spicy.  Chris told me his nose was starting to run when he was eating them lol… but it didn’t stop him, or Dillon for that matter, from eating them!

Stuffed meatballs are quick and easy to make, freeze well (without the sauce) and make a great dinner.

We actually had a few left… believe it or not with “the boys” appetites… and when I made Chili for dinner a few nights later, Dillon suggested I chop the leftovers up and throw them in with the chili to use them up.  They added a little more beef to the chili and a little bit more bite to the chili.  It was a very good suggestion on his part!

Moist Chocolate Zucchini Bread

Since I had another rather large zucchini from my garden…. I swear someone slipped the zucchini some steroids when I wasn’t paying attention…. I thought I would make Chris and Dillon some Chocolate Zucchini bread.  Chris told me he loves chocolate zucchini but when I asked him if he had tasted it before, he said no?  Lol, how did he know he loved it if he hadn’t even tasted it?  I’m baffled lol.

You can also add chocolate chips or nuts or raisins, whatever you like to this recipe, but I left it just plain and very chocolatey for this batch!

I sent some to work with him in his lunch can and got two thumbs up from him and “the kids at school on recess” lol.  First they were going to give me grief about the fact it wasn’t buttered (like they do with banana bread lol), but the thought of putting butter on something chocolate just doesn’t seem right.  Either way, the bread was well received… good thing this recipe makes two loaves!!!

Green Tomato Relish

I ended up with a whole big bowl of green tomatoes in my garden that I knew with the cold weather fast approaching were not going to ripen.  I didn’t want to just toss them over the fence for the cows, that seemed a waste of the fact I was actually able to grow vegetables this year.  I decided to try an old recipe I had for a Green Tomato Relish.

The smell of relish cooking is delicious…. it could taste awful but it sure makes the house smell nice. I only ended up getting 5 jars of this relish but it is still better than having wasted them!

Roasted Butternut Squash with Feta Cheese, Cinnamon and Honey

Somehow I ended up with butternut squash plants when I purchased my vegetable plants in the spring.  I honestly had no idea what they were because the little tag was missing.  I decided to plant them anyway and see what, if anything, they would grow into.  Low and behold, I managed to grow a couple of squash…. well, it was actually more than a few but I had run over part of the plant with the riding lawn tractor and destroyed a few other that had started 😦

While I personally don’t like squash of any kind, I still thought I would give it another try in case my tastes had changed… they haven’t… but surprisingly the one person I didn’t think would even try it, let alone eat all of it (Dillon) cleaned his plate lol!
