Instapot Cheesy Potatoes

I couldn’t figure out what to call these potatoes, other than Cheesy.  They came out different than I expected but one, I am still experimenting and two, they were delicious no matter what the consistency was lol.

These potatoes are sort of mashed, sort of cubed and sort of scalloped lol… so how do I pick which of these to label them?  I don’t… I just post the recipe as I made it and reiterate that they were delicious!

While the potatoes might not make for the nicest pictures, after taking his first mouthful of them Chris commented on how good they tasted!



This is what I used to make the potatoes.


I cubed the potatoes to about 1 inch and put them in the bowl of the Instapot with salt and pepper and the chicken broth.


I set the Instapot to Pressure Cook for 6 minutes and the vent to seal. It took about 10 minutes for the Instapot to build up the pressure before the potatoes started to cook.

Once the cooking cycle was complete I did a manual steam release and added the butter/margarine, ranch dressing and grated cheese.


Then switched the Instapot to Sauté to thicken the sauce the potatoes are in.

Note: At this point I could also have drained the broth from the potatoes and then sautéed them but I decided to leave it in.  I think if I were to drain the broth the potatoes would have had a completely different texture and taste…. maybe next time I will try it that way… all in the name of experimentation lol!


Once the sauce thickened, I spooned them out onto plates to have for dinner!



Instapot Cheesy Potatoes

Preparation Time: 10 minutes  Cooking Time: 6 min + 5 min  Servings: 4


  • 6 – 8 medium potatoes
  • 3/4 cup chicken broth
  • salt and pepper to taste
  • 2 tbsp. butter/margarine
  • 1/4 cup ranch dressing
  • 1 cup grated cheese


  1. Wash and cube potatoes and place in Instapot.
  2. Season with salt and pepper and add chicken broth.
  3. Cook on Pressure cook (with vent set to seal) for 6 minutes.
  4. When cooking cycle is complete, add grated cheese, butter/margarine and ranch dressing and mix well.
  5. Set Instapot to Sauté and let cook for another 3 – 5 minutes to thicken sauce.
  6. Serve immediately.
