Banana Oatmeal Pancakes

I’m back lol!  Yesterday, while I took a day off from blogging, I did make some banana oatmeal pancakes for breakfast.  In the last two weeks I have retiled the bathroom floor…. meaning ripping up the old tiles and laying new ones…. a lot of work….especially considering how many head breaks I had to take!  Last week it was the kitchen.  I redid the backsplash and updated a few things…. I will post about that later in the week!

For now, I will post the recipe for the delicious, fluffy Banana Oatmeal Pancakes we had for breakfast on Sunday!



Here are my ingredients.  These pancakes are a great way to use up over ripened bananas if you want a change from banana bread! (I did not use baking soda and I am not quite sure how it ended up in the picture lol…. I must be more tired than I thought)


In a large bowl, I mashed the bananas and added the milk and egg, whisking to make sure they were well blended.


I added the flour, baking powder, cinnamon and sugar and whisked until just blended.


I melted about 1 tbsp. of margarine in my frying pan and let the pan get hot before ladling about 1/4 cup of batter for each pancake into the pan.


Once all the bubbles on top had popped, I flipped them over to brown the other sides.  Don’t they look delicious already?


To served I removed them to a plate, topped them with sliced bananas, sprinkled cinnamon and then poured some fresh maple syrup on them for a very hearty breakfast!



Banana Oatmeal Pancakes

Preparation Time: 10 minutes  Cooking Time: 10 minutes/batch Servings: 16 small pancakes


  • 2 ripe bananas
  • 1 1/4 cup milk
  • 1 egg
  • 1 1/3 cup flour
  • 3/4 cup oatmeal
  • 1 tbsp. sugar
  • 2 tsp. baking powder
  • 1 tsp. cinnamon
  • butter/margarine for cooking
  • banana, sliced for topping
  • maple syrup


  1. In a large bowl, mash bananas and add milk and egg.  Whisk to fully blend.
  2. Add flour, oatmeal, sugar, baking powder and cinnamon and whisk until just blended.
  3. Melt 1 tbsp. margarine in frying pan and allow pan to heat up.
  4. Pour about 1/4 cup batter for each pancake into pan.
  5. Let pancakes cook until bubbles on top pop and then flip pancakes to brown other side.
  6. Remove from pan and top with sliced bananas, a sprinkle of cinnamon and maple syrup.
