Sour Cream Biscuits with Dill and Parmesan

Dinner was a last minute affair the other night because I had been so busy… I am not sure if it was all busy busy…. all I knew was that dinner time was quickly approaching and I was not prepared!!!  That is one of the reasons I am big on Make Ahead meals…. something I can pull out of the freezer and it’s ready for reheating. That night, it was chili and I needed some kind of bread to go with it. Obviously I didn’t have much time to make something using yeast and I am not a big fan of quick/baking soda breads, so I opted for biscuits…. who doesn’t like biscuits?

I used a sour cream biscuit base and added some dill and parmesan to jazz them up a little bit! Because of the sour cream, they don’t end up becoming rocks the next day if you don’t eat them all in one sitting!

Here are the ingredients I used to make the biscuits.

In the bowl of my stand mixer, I whisked together the flour, salt, baking powder, baking soda and dill.

I added the butter/margarine by the tablespoonful and mixed it until it was crumbly.

I added the sour cream and mixed until it formed a ball and everything was mixed in.

I rolled the dough out onto a generously floured surface.

And used a biscuit cutter to cut the biscuits out  and placed them in my parchment paper lined baking pan.

I baked them at 400 degrees for about 15 to 20 minutes, until golden brown. I served them with butter, alongside the hearty chili!
