Triple Threat Pork Tenderloin

Lol… I didn’t know what else to call it that wouldn’t end up being a paragraph in name…. pork tenderloin rubbed with spices and brown sugar, rolled in bacon and then smothered in a maple mustard sauce.  Isn’t that a mouthful?  I think the title I decided on works just fine!

I really couldn’t decided which way I wanted to cook the pork tenderloin for dinner the other night so I decided to combine a few different ways and the end result was a very flavourful pork tenderloin that even passed the Chris Chocolate Milk test lol!

Here are the ingredients I used to make my Triple Threat Pork Tenderloin…. except for brown sugar… as per my norm, I forgot to include an ingredients lol!

To start, I combined the cumin, cayenne, paprika, ginger and brown sugar in a small bowl to make the rub.

I sprinkled and rubbed this mixture all over the pork tenderloin, coating it evenly.

Next, I wrapped the rubbed tenderloin with the bacon, tucking the edges under the start of each new slice.  I used about 6 or 7 slices per tenderloin. And I placed it into my foil lined baking pan.

In a small bowl (I used the same small bowl), I mixed together the Dijon mustard, hot and spicy mustard and maple syrup….

And brushed this mixture evenly over the bacon wrapped tenderloins.

I cooked them at 375 degrees for about 45 minutes to one hour, until cooked through and the top was nicely browned from the sauce.

I sliced it….

And then served it with some scalloped potatoes and veggies!

Recipe

Triple Threat Pork Tenderloin

Preparation Time: 15 minutes  Cooking Time: 45 – 60 minutes  Servings: 2 x pork tenderloin

Ingredients

  • 2 pork tenderloin
  • 2 tbsp. paprika
  • 1 tbsp. ginger
  • 1 tsp. cumin
  • 1 tsp. cayenne
  • 2 tbsp. brown sugar
  • 1 lb. bacon
  • 2 tbsp. Dijon Mustard
  • 2 tbsp. hot and spicy mustard
  • 2 tbsp. maple syrup

Directions

  1. Preheat oven to 375 degrees.  Line baking pan with foil.
  2. In small bowl, mix together paprika, ginger, cumin, cayenne and brown sugar.
  3. Rub mixture to all sides of pork tenderloin evenly.
  4. Wrap pork tenderloin fully with strips of bacon.  I used about 6 or 7 strips per tenderloin.
  5. In small bowl, whisk together both mustards and maple syrup.
  6. Brush maple/mustard sauce evenly on pork tenderloins.
  7. Bake at 375 degrees for about 45 – 60 minutes, until fully cooked and top is browned.
  8. Slice and serve.
