These are a huge family favourite, they always have been for as far back as I can remember. They are such a favourite that I can always get Dillon to do the rolling part for me lol. While that isn’t necessary always a good thing, it is one thing I can mark off my list of things to do. This year he not only rolled the requisite “balls,” but he also made a log and a cube???? I don’t know if he is reverting back to his childhood and pretending it’s playdoh or what he’s up to but the help is appreciated!

The ingredients for these are items you probably have on hand already, except for maybe the candy melts and Christmas sprinkles I used to coat and decorate them. Somehow I either deleted the “ingredients” picture or forgot to take it…. imagine that!
To make the peanut butter balls themselves, add the peanut butter, margarine, vanilla and icing sugar to the bowl of the stand mixer and mix until the ingredients are fully blended.
Roll the peanut butter mixture into one inch balls…. or cubes or logs lol???
Let the peanut butter balls chill in the fridge for a few hours.
Melt the candy melts in the microwave according to the package directions.
Using a spoon, dip each peanut butter ball in the melted chocolate and add sprinkles if desired until all the peanut butter balls are coated.
Place pan back in fridge until chocolate is set. (You can see Dillon’s log and cube in the bottom left hand corner lol)
Place them on a plate or big baggie once set and enjoy…. hopefully you actually have some left over when it’s time to assemble your Christmas cookie trays!

Peanut Butter Balls
Preparation Time: 30 minutes Chill Time: 2+ hours Servings: about 2 – 3 dozen
Ingredients
- 3/4 cup peanut butter
- 1/4 cup butter/margarine
- 1 tsp. vanilla
- 4 cups icing sugar
Directions
- Line a baking pan with parchment paper.
- In bowl of stand mixer, add all ingredients except for chocolate melts.
- Mix until well blended.
- Shape peanut butter mixture into one inch balls and place on prepared baking pan.
- Allow to chill in fridge for about 2 hours.
- Melt candy melts in microwave according to package directions.
- Using a spoon, dip peanut butter balls in chocolate to coat and add sprinkles if desired.
- Chill until chocolate is set.
