Gluten Free Garlic Flat Bread/Breadsticks

A family member has been diagnosed with Celiac Disease, something that seems to have gone mainstream since we first learned of the diagnosis.  While there is now a ton of gluten free food items on the market, I have been told they are for the most part inedible!

I thought I would take it upon myself to try my hand at some Gluten Free baking to hopefully make something not only edible, but enjoyable!

I will be posting recipes here and there that I have done, using gluten free ingredients and I would have to guess… learning a whole lot about what can and can’t be eaten!

I thought I would start with this recipe, not only because of the simplicity but also because…. how can you go wrong with anything garlic lol!  I decided after I had taken my ingredient’s picture that I wanted to add some grated parmesan cheese to the tops of the flat bread/breadsticks for just a little bit more flavour…. after typing it into a search engine to ensure it too was gluten free.

NOTE:  I think these would also be great with a little bit of tomato sauce and more mozzarella cheese to make a sort of pizza!


Here are the ingredients… without the parmesan cheese as mentioned above.

Here comes the hard part lol…. place all ingredients, except for the grated parmesan in a large bowl.

Mix until all ingredients are fully combined.

Place mixture into two circles on a parchment paper lined baking sheet and sprinkle with the grated parmesan and a little extra of the italian seasoning.

Bake at 350 degrees for about 20 minutes, until the top is browned and starting to get bubbly.

Slice and serve.  I didn’t slice the ones I made.  I placed them, separated by the parchment paper and stored in a large baggie.  I suggested reheating them by placing them in aluminum foil and baking for about 10 minutes at 350 degrees.

Gluten Free Garlic Flat Bread/Breadsticks


  • 2 cups mozzarella
  • 1/2 cup almond flour
  • 2 eggs
  • 3 tsp. garlic powder
  • 1 tsp. italian seasoing, plus a little to sprinkle on top
  • !/4 cup grated parmesan


  1. Preheat oven to 350 degrees.  Line baking sheet with parchment paper.
  2. In a large bowl, combine mozzarella, almond flour, garlic powder, italian seasoning and eggs.  Mix until very well blended.
  3. Place mixture into two circles on prepared baking sheet.
  4. Sprinkle with grated parmesan.
  5. Bake at 350 degrees for about 20 minutes, until browned and starting to bubble.
  6. Slice and serve.
