This is a recipe I clipped years ago from a magazine or something and I always meant to try. Even though it took years for me to actually try it, it was well worth the wait. Chris and Dillon loved it! As Chris was eating he was talking about what else we could put the “sauce/gravy” on lol. If only he knew what it was made from and how easy it is!
I think almost everyone has a club pack or few pounds of ground beef in their freezers…. add some milk, crackers, spices and some condensed (or homemade condensed) soups for the “white gravy,” and you have a great main dish for your dinner!

Here are the ingredients I started with… and yes, for once I think I actually have all of them!!!

I put the sleeve of soda crackers in a large freezer bag and used my rolling pin to crush them…. if you don’t have a big rolling pin or just don’t want to dig it out… you could always just use the cans from the soups before you open them to roll over and crush the crackers.

In a large mixing bowl, I combined the ground beef, crushed soda crackers, milk, garlic powder, onion salt, Italian seasoning and cayenne.

I mixed it by hand until it was well blended and then divided the mixture and shaped it into 8 patties.

I poured the flour into a bowl big enough to accommodate at least one patty at a time and coated each patty in the flour.

I sprayed my frying pan with cooing spray and browned both sides of the burgers. I had to do it in two batches of 4 because that was all the would fit in my frying pan.

I removed the browned patties to two lightly aluminum pans (you could also do them in a 9 x 13 pan if you are serving them to a larger group. I chose to make two pans of it so I could add one pan to my freezer meal stash).

To make the sauce/white gravy, I put the two kinds of condensed soup and second amount of milk in a large measuring cup and whisked until well blended.

I poured this mixture over the patties in each of the pans, dividing it evenly and sprinkled the top with the parsley.

I baked them, covered with aluminum foil in a 350 degree oven for 30 – 40 minutes.

I served them with some plain mashed potatoes and vegetables and it was a sure hit… one that we will be making again and again… I am sure glad I saved that clipping!

Poor Man’s Steak
Ingredients
- 2 lbs. lean ground beef
- 1 sleeve soda crackers
- 1 cup milk
- 1 tsp. Italian seasoning
- 1 tsp. garlic powder
- 1 tsp. onion powder
- 1/2 tsp. cayenne
- 1 cup flour
- 1 can condensed cream of mushroom soup
- 1 can condensed cheddar cheese soup
- 1 1/2 cups milk
- parsley for sprinkling
Directions
- Preheat oven to 350 degrees. Lightly grease a 9 x 13 or 2 – 9×9 baking pans.
- Place soda crackers in a large freezer bag and crush using rolling pin.
- In large bowl, add ground beef, crushed crackers, Italian seasoning, garlic powder, onion powder, cayenne and milk.
- Mix by hand until well blended and then shape into 8 patties.
- Place flour in bowl and coat each patty in the flour.
- Place the patties (in two batches if necessary) into a lightly greased frying pan and brown each side.
- Remove patties to prepared baking pan(s).
- In large measuring cup, add both condensed soups and second amount of milk. Whisk to combine.
- Pour mixture over patties in baking pans.
- Sprinkle with parsley and bake at 350 degrees, covered, for 30 – 40 minutes.
- Remove from oven and serve.
- Note: the sauce/white gravy goes great over mashed potatoes too!
Tha is for sharing as I now know what to fix for supper! Easy!!! Try Golden Condensed Cream of Mushroom sometime, that’s a good one too! Maybe throw in a can of rotel tomatoes for a twist !

I just put mine in the oven! I used Parmesan cheese, onion tips, Panko and Worcestershire sauce in it and seasoned the meat with my favorite Freedom Fry seasoning! Then I used one can of golden cream of mushroom with one of those small cans or mushroom and steak sauce, added a little milk and poured it all on top. For good measure I sprinkled more of my seasoning on top lol since ya down here in the Deep South like spicey foods! Thanks for sharing that recipe!
