I have to say it’s hilarious watching Chris when this is what we are having for dinner. I swear once his own are eaten he keep s checking Dillon’s plate to see if maybe he didn’t eat all of his. And some times I swear he keeps looking to see if I am watching as if he is going to actually lick the plate lol. It’s okay, one of my greatest pleasures in life is to feed people and even more than that… to see how much they enjoy it! Knowing how much my cooking is enjoyed/appreciated helps keep me motivated to continue and to try different things!
These are the ingredients I used…. You could use pork chops or a pork roast and cut them up but I prefer to use pork tenderloin.
And these are the cool new skewers/BBQ combs I found at the dollar store of all places!
The first thing I did was to cut the pork into cubes, about 1 inch, and then washed, cored and cut the pepper into one inch square pieces. You could also add some onion to the skewers, I just forgot this time.
I alternated pieces of pork with pieces of pepper on the skewers.
Then I whisked together the rest of the ingredients in a medium sized bowl. Because of the molasses and brown sugar, this will be very thick and stick nicely to the skewers… caramelizing when BBQed.
I brushed the skewers with the sauce, making sure to completely cover the pork and peppers.
I wrapped it up and let the skewers marinate in the fridge for about 4 hours before BBQing them. I think Chris said he cooked them for about 10 minutes per side on medium high heat. They don’t take long to cook because of the metal skewers and because the pieces of pork are small.
I served them with some fried rice and a cold plate with veggies, cheese and pickles.
NOTE: I had some leftover pork pieces because my pork tenderloin came in a package of 2.. so I put them in a large freezer bag with the rest of the marinade and froze them. Now they will be pre-marinated and ready to fry up or BBQ to add to something in future, even if it’s just some rice or pasta.
Pork Skewers in a Molasses Marinade
- Pork tenderloin, I almost used 2 small ones
- 1 large yellow sweet pepper
- 1/2 cup packed brown sugar
- 2/3 cup molasses
- 2 tbsp. apple cider vinegar
- 1 tsp. nutmeg
- 1 tsp. red pepper flakes
- 1 tsp. onion powder
- salt and pepper to taste
- Cut pork into 1 inch cubes.
- Wash, core and cut pepper into 1 inch pieces/squares.
- In medium bowl, whisk together remaining ingredients.
- Place pork and peppers on skewers.
- Brush pork and peppers with marinade.
- Wrap and let marinate in fridge for 3 – 5 hours.
- BBQ on medium high heat for about 10 minutes per side, until fully cooked.
- Serve and enjoy
