Baked Pumpkin Donuts

It’s official… it’s Pumpkin Season! I was more than ready to hop on board… although I really don’t know why we only tend to eat/make pumpkin recipes this time of year. It’s not like pumpkin, whether it be in a can or not, isn’t available year round!!! I will have to ponder that one lol!

This time it is Pumpkin Donuts I made, baked Pumpkin Donuts to be exact! While baking as opposed to frying them probably doesn’t make them healthy, it definitely makes them better for you than fried donuts…. at least that’s what I am telling myself!

These are the ingredients I use to make the donuts… except I forgot the eggs in the picture.

To start, I add the vegetable oil, eggs, sugar, pumpkin, cinnamon, ginger, nutmeg, salt, baking powder and vanilla to the bowl of my stand mixer and mix until fully combined.

I add the flour next, and mix until blended.

I use a disposable icing bag to “pipe” the batter into the cavities of my donut pans.

And then bake them in a 350 degree oven for about 15 – 20 minutes, until the donuts are done.

I let the donuts cool for about 5 minutes.

While they are cooling, I add 1/3 cup of sugar and 2 tsp. cinnamon to a large baggie and shake to combine.

After the 5 minutes, I place each donut in the bag with the cinnamon sugar mixture and shake gently to coat.

And if you are really lucky, there will be a few left once that step is completed. Chris was hovering around the kitchen just waiting to eat the donuts. I swear he was eating them as fast as I was coating them lol!


Baked Pumpkin Donuts

Ingredients

  • 1/4 cup vegetable oil
  • 2 eggs
  • 3/4 cup sugar
  • 3/4 cup pumpkin (not pumpkin pie filling)
  • 1/2 tsp. salt
  • 2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1 tsp. ginger
  • 1 tsp. baking powder
  • 1 tsp. vanilla
  • 1 cup flour
  • 1/3 cup white sugar
  • 2 tsp. cinnamon

Directions

  1. Preheat oven to 350 degrees. Spray donut pans with cooking spray.
  2. In bowl of stand mixer, mix together the vegetable oil, eggs, sugar, pumpkin, salt, cinnamon, nutmeg, ginger, baking powder and vanilla until well blended.
  3. Add flour and continue mixing until fully combined.
  4. Use an icing bag to “pipe” the batter into the cavities of the donut pan. (using the icing bag makes it so much neater)
  5. Bake at 350 degrees for about 15 – 20 minutes.
  6. Remove from oven and allow to cool 5 minutes.
  7. In large baggie add sugar and cinnamon and shake to combined.
  8. Place each donut, individually into the bag with the cinnamon sugar and shake to coat.
  9. Once all donuts are coated, enjoy!
