Christmas Leftover Poutine 

We hope everyone had a great Thanksgiving! I thought I would repost this recipe/directions to make Poutine with leftover turkey and the fixings.  It is a great Boxing Day meal and is very easy to make.  It is also a great way to use up any leftovers you might have !

Happy Thanksgiving!

I spent all of yesterday getting the gardens ready for that dreaded “W” word, so I didn’t get anything done to post.

I/we did however want to wish everyone…. everyone who celebrates Canadian Thanksgiving anyway… a very safe and Happy Thanksgiving!

Pumpkin Pie

I knew I was going to be out of town today but didn’t get anything ready to post, so I thought I would reshare my pumpkin pie recipe. It seems fitting since it is our Canadian Thanksgiving this weekend !

I did a lot of cooking yesterday and hopefully I will get it all posted before Thanksgiving actually arrives.

I made two pumpkin pies to have with dessert. We are going to have that and the other half of the Chocolate Peanut Butter Cheesecake I made last week and froze.

I know it seems easy to just buy a can of prepared pumpkin pie filling but it really isn’t that much more difficult to mix it up yourself with a can of pumpkin puree. I have been making this same recipe for probably almost 30 years now… and yes, that was hard to admit to… and other than the one time I forgot to add the sugar lol, it has always tasted great.

Lemon Loaf Cake – Update

I wanted to do an update on this post. I liked the texture of this loaf cake, and how fresh it stayed in both flavour and texture that I decided to try it with another cake mix/pudding combination.

This time I used a white cake mix and vanilla pudding. I also had about a cup of chocolate chips left in the cupboard so I threw them in too.

While the taste and texture was still awesome and chocolate chips do taste really good in it, the chocolate chips all sunk to the bottom of the loaf. I know that doesn’t affect the taste at all but I think next time it would probably work better if I added the chocolate chips or anything else I might want to add to the dry ingredients to see if they “stay” where they are supposed to be…. scattered throughout the loaf. Still a great taste and texture, just sunken chocolate chips lol!

Next I’m thinking maybe a nice spice cake mix and butterscotch pudding lol???

Last week I finally tried one of those cake mix/pudding recipes… you know the ones that say only 5 ingredients too make?

I really didn’t expect it to work out very well because I tried the same sort of thing with cake mix donuts a few weeks back. That was an epic fail! When I tried to get them out of the pan they just crumbled.

Why I thought it would be a good idea to give it another go is beyond me, but thankfully this time it was an epic win!

The loaf cake turns out so moist and flavorful, and it almost has a pound cake texture. I will definitely try it again!

Date & Nut Loaf

For as far back as I can remember, this has been one of Dillon’s favourites. He always swore up and down he didn’t like anything with nuts in it, but he loves this loaf cake.

His grandmother used to make loaf after loaf of this each Christmas. I don’t make anywhere near that many loaves and I don’t think it should be relegated to just being eaten at Christmas…. so I make it all year round!

Wall Collage

Between the dollar store and my Cricut I managed to get my “Wall Collage” done yesterday!

I had seen a bunch of examples of a wall collage on Pinterest and thought it would perfect for the empty wall that used to have the mirror we ended up putting in the bathroom.

I looked at quite a few examples before I decided what I wanted to do.

I chose to go with a family theme for most of the items.

I made 3 signs using my Cricut.

Once I had assembled what I was going to put on the wall I laid it out on the trundle so I could find how I wanted to place everything and to measure it.

I measured and marked and started to hang everything.

I was very happy with the results. This wall is the first thing you see when you walk in the front door and I think it makes a pretty good impression!

I even put a little battery light in the middle because I thought it would be nice to have a little light in that corner.

Here is my wall… with little light on and off! (You can also see the cute cow a friend made for me years ago!)
