Homemade Tomato Soup

Not only homemade… but made with tomatoes from my garden!!!

A family member isn’t feeling up to par, so I thought I would make a few different kinds of soup for them. I don’t know about anyone else, but hot, homemade soup always makes me feel better. There are some soups that are always my go to when feeling under the weather, but I think any soup that someone else makes for you is definitely going to hit the spot!

(Sorry about the picture… because I was making it for someone else, and freezing it, the picture isn’t the greatest!)

Here are my ingredients. You can see all the delicious tomatoes from my garden!

The first thing I had to do was to peel my tomatoes. I did that by cutting an “X” in the bottom of each one, placing it in a pot of boiling water for about 30 seconds and then putting it right into a sink full of ice cold water. The skins will pretty much just fall off this way.

Once peeled, I chopped the tomatoes up ready to add to the soup.

Next I placed the diced onion (I used frozen because I was out of fresh), minced garlic and olive oil into my big soup pot and sauteed them until the onions had softened.

After the onions were cooked, I added the tomatoes, bay leaves, salt & pepper, oregano and the broth. (I only had beef broth when I made it so that was what I used. I normally use a chicken or vegetable broth).

I brought this mixture to a boil, then lowered the heat and let it simmer for about a half hour.

Once it was done simmering, I added about 1 cup of cream and mixed it in to the soup.

I brought it back up to heat and then this is when I would serve it if I wasn’t freezing it!


Homemade Tomato Soup

Ingredients

  • 6 cups diced tomatoes, fresh or canned
  • 4 tsp. minced garlic
  • 1/2 cup chopped onion
  • 3 tbsp. olive oil
  • 2 cups broth
  • salt & pepper
  • 3 bay leaves
  • 1 tsp. oregano
  • 1 cup cream

Directions

  1. If required, peel and dice tomatoes and set aside.
  2. Place onion, minced garlic and olive oil in big soup pot.
  3. Saute until onions have softened.
  4. Add tomatoes, broth, salt & pepper, bay leaves and oregano.
  5. Bring to a boil, then lower heat and allow to simmer for 30 minutes.
  6. After simmering, remove from stove, add cream and stir well.
  7. Bring soup back up to heat and serve.
