Oven Baked Fish

I had a real hankering for fish for dinner the other night. Myself, I prefer it just baked with a little bit of salt, butter and lemon juice, but Chris likes it lightly crusted. This time I did it his way lol.

This way to bake fish is very easy to prepare and tastes great! The top is nice and crispy and the fish just falls apart in your mouth! It is certainly not the deep fried greasy, yet delicious fish you get from the fish and chips restaurants as a treat lol, but it is still great in it’s own right!


This is what I used to make this recipe. Well, except for the milk that I actually got out… just forgot to put in the picture lol.

In a small bowl (or a bowl big enough to fit the fish fillets) I mixed together the panko, Parmesan, thyme and salt.

I put milk in another bowl and lined the bowls and a parchment paper lined baking pan up, assembly line style, ready to prepare the fish.

I dip the fish first in the milk, making sure both sides get into the milk.

Then into the panko mixture, making sure to press the mixture into the fish before placing each piece into the baking pan.

I drizzled the top with the melted butter/margarine and it was ready to be baked.

I baked the fish at 450 degrees for about 25 minutes until it was starting to brown on top.

Then set the oven to high broil for about 5 more minutes to crisp up the top before serving. I served it with some boiled potatoes cooked in a bit of chicken broth and minced garlic and veggies!

Oven Baked Fish


  • 4 fish fillets, I used haddock
  • 3/4 cup milk
  • 1 cup panko
  • 1 tsp. salt
  • 1/4 cup Parmesan
  • 1/4 tsp. thyme
  • 1/4 cup butter/margarine, melted


  1. Preheat oven to 450 degrees. Line baking pan with parchment paper and give it a light spray with cooking spray.
  2. In a small bowl, combine panko, Parmesan, salt and thyme.
  3. Pour milk in an other bowl.
  4. Place each fish fillet in first in the milk and then in the panko mixture, making sure to press the panko mixture into the fillets before placing them in the prepared baking pan.
  5. Before baking, drizzle the melted butter/margarine over the fillets.
  6. Bake at 450 degrees for about 25 minutes.
  7. Turn oven to High broil for about 5 minutes before serving to crisp up the top.
