Sausage and Egg Breakfast Crescent Rolls

Two days in a row… who would have thought???

This is another one of the quick breakfast ideas I used over the holidays to keep everyone fed and relatively quiet so I could go about my business in relative calm.

It was quick and easy to prepare, even more so because I already had some scramble cooked sausage meat from another recipe I had made.

Here is the ingredients list.

  • 1 package refrigerated crescent rolls
  • 4 slices cheese
  • 4 eggs
  • about 1/2 cup cooked, crumbled sausage meat

To make the croissants:

I unrolled the crescents from the package and laid the triangles on a parchment paper lined baking pan.

I cut the cheese slices in half diagonally and laid them on the crescent rolls.

I broke my eggs into a microwave safe bowl, whisked them (saving about 2 tbsp. of the egg to brush on the crescent rolls before baking) and scrambled them, adding the cooked sausage about half way through to ensure it “stuck” into the eggs.

I divided the egg/sausage mixture evenly between each crescent roll and then rolled them up.

I brushed the tops with the reserved 2 tbsp. of egg from the step above.

I baked them at 375 degrees for about 15 minutes until the crescent roll dough was cooked all the way through and nicely browned on top.

Here they are cooked and ready to eat! Another quick, easy and delicious breakfast idea! Great for those busy weekends!
