Crispy Potato “Cake” – Side Dish

A post that doesn’t involve my Cricut!!!! This post is a recipe I made a few weeks ago to have with dinner one night. It is similar to the Potato Stacks I made a while ago except it is one BIG stack and made in a sort of “cake” form The potatoes are sliced thin, covered in a mixture of olive oil, Italian seasoning, salt & pepper, parmesan cheese, shredded mozzarella/cheddar and then “stacked” inside a spring form cake pan to get the shape before baking in the oven to get the nice crispiness!

These potatoes are a delicious side dish to go with any meal!

Cabbage Roll Soup

Who doesn’t love cabbage rolls? Yum!!! But who loves the work it takes to make them? While very worth the effort, sometimes you just want the taste of homemade (not frozen) cabbage rolls without the work. This soup gives you that and is perfect for some of the rotten winter weather we have been having! Dillon even liked it and he swears up and down that he doesn’t like cooked cabbage! Who doesn’t like cooked cabbage? That’s just wrong!!! To me there is nothing like the smell (and of course the taste) of just boiled cabbage, with a little bit of butter and salt…double yum!

This soup is very easy to make and with a little preparation you can have the delicious taste of cabbage rolls in a soup!

(We were into our bowls of soup so fast I didn’t even get a “nice” picture of a bowl of soup to add to my post lol!!!)

Taco Ground Beef and Rice

I took our ground beef the other night with the intention of making a pot of chili…. only to find out I had used the kidney beans I had to make a pot of Vegetable Soup. That totally messed my dinner plans.

I could have always fallen back on one of my Freezer Meals… yes, I do still have some lol… .but I had already thawed the ground beef so I had to use it.

This meal came to mind and the end result was very well received!

I didn’t take as many “step by step” pictures as I should of because…. well, when I get my camera app open, someone always seems to look so cute that I get pretty distracted and forget what else I am supposed to be taking pictures of originally….. little Miss Lucy lol! She is a joy and is getting so BIG already!

Sausage and Egg Breakfast Crescent Rolls

Two days in a row… who would have thought???

This is another one of the quick breakfast ideas I used over the holidays to keep everyone fed and relatively quiet so I could go about my business in relative calm.

It was quick and easy to prepare, even more so because I already had some scramble cooked sausage meat from another recipe I had made.

Ham and Egg Breakfast Cups

Very late…. but I did make it today lol!!!

Over the holiday season, and while Chris was off, I found myself trying to come up with different breakfast ideas. Not that Chris wouldn’t eat peameal and eggs every single day… it was that I didn’t want to have to cook peameal and eggs every single day lol!

I remembered seeing this sort of idea somewhere before and thought this would be the perfect time to try it out!

They turned out so well that I ended up making them at least twice over the holiday season and they will definitely become a regular part of our weekend breakfast rotation!

They don’t look like they would be much of a breakfast but they are surprisingly filling!

One Pan Garlic Dijon Pork Tenderloin and Vegetables

Here is a quick to prepare, hearty dinner. Very little prep time, other than washing, peeling and chopping the vegetables, but you can do that ahead of time and have this meal ready to toss in the oven.

The only trouble I have with the veggie prep is that our hound, Leroy, thinks that every time I am chopping the veggies he should be getting carrots or something and stands there staring at me until I “accidentally” drop something for him lol. Do you know awkward it is trying to get stuff done with someone/something staring at you the whole time lol?

Anyway, this is a quick and delicious meal, quick enough to prepare for any night of the week!

Glazed Meatloaf

Happy Birthday To Me lol! I am writing this post on Thursday so that I can take today off! I actually made this meatloaf on Wednesday and just a note, this recipe makes 2 meatloaves so if you don’t want to make the two rather large meatloaves cut the recipe in half. My freezer meals for the month of December are done… I technically do not have to cook for the whole month of December now but I decided to do a few more so that I won’t have to worry about it for the beginning of January as well lol… the after Christmas hangover season. Today (Thursday) I am going to make a couple of pans of everyone’s favourite “Baked Macaroni,” and that is it… no more cooking until sometime in January… thaw and reheat and that’s it…. woo hoo!

As with most meatloaf recipes, this is quick and easy to mix together and get in the pan and the glaze is just as easy to make and brush on the meatloaf part way through cooking and is absolutely delicious. It also freezes wonderfully so you too can have a freezer meal on hand for those days where you just don’t want to!

Oven Baked Fish

I had a real hankering for fish for dinner the other night. Myself, I prefer it just baked with a little bit of salt, butter and lemon juice, but Chris likes it lightly crusted. This time I did it his way lol.

This way to bake fish is very easy to prepare and tastes great! The top is nice and crispy and the fish just falls apart in your mouth! It is certainly not the deep fried greasy, yet delicious fish you get from the fish and chips restaurants as a treat lol, but it is still great in it’s own right!

Keto/Diabetic Tuna Melt Puffs

I have been looking for different options to diabetic meals. I apparently hadn’t been doing a good enough job of watching my sugar/carb intake between blood tests so I have to go full on diabetic diet.

The thing I really miss is bread!!! An easy meal for myself ( because I don’t eat any kind of meat due to allergies) would be a PB sandwich on some kind of grain bread. Quick and mostly healthy lol!

I love tuna and tuna melts so this seemed like a great recipe/meal to try. I saw it in a magazine in the doctors office and took a picture of the recipe so I could try it!

It only took a few minutes to prepare and it really did taste great. The recipe called for 3/4 tsp. salt but I omitted that because I really didn’t think it needed it and I am glad I did! It tasted just fine without it!

Spicy Buffalo Ranch Chicken Meatballs

When I gave these to Chris for dinner the other night (Dillon is on an afternoon shift right now), I thought that this time I overdid it with the spicy part lol. It took 2 glasses of milk and a runny nose, but he did eat them all and enjoy them lol!

This is an easy recipe to make and if you do as I did and double it, it’s an extra “Freezer Meal” for another day This is the time of year that I try to make double of whatever I am making to freeze for the busy month of December when cooking time is at a minimum, ensuring I not only get the Christmas stuff done I want to but that everyone is also being fed good homemade meals with little effort on my part!
