Glazed Meatloaf

Happy Birthday To Me lol! I am writing this post on Thursday so that I can take today off! I actually made this meatloaf on Wednesday and just a note, this recipe makes 2 meatloaves so if you don’t want to make the two rather large meatloaves cut the recipe in half. My freezer meals for the month of December are done… I technically do not have to cook for the whole month of December now but I decided to do a few more so that I won’t have to worry about it for the beginning of January as well lol… the after Christmas hangover season. Today (Thursday) I am going to make a couple of pans of everyone’s favourite “Baked Macaroni,” and that is it… no more cooking until sometime in January… thaw and reheat and that’s it…. woo hoo!

As with most meatloaf recipes, this is quick and easy to mix together and get in the pan and the glaze is just as easy to make and brush on the meatloaf part way through cooking and is absolutely delicious. It also freezes wonderfully so you too can have a freezer meal on hand for those days where you just don’t want to!

Oven Baked Fish

I had a real hankering for fish for dinner the other night. Myself, I prefer it just baked with a little bit of salt, butter and lemon juice, but Chris likes it lightly crusted. This time I did it his way lol.

This way to bake fish is very easy to prepare and tastes great! The top is nice and crispy and the fish just falls apart in your mouth! It is certainly not the deep fried greasy, yet delicious fish you get from the fish and chips restaurants as a treat lol, but it is still great in it’s own right!

Keto/Diabetic Tuna Melt Puffs

I have been looking for different options to diabetic meals. I apparently hadn’t been doing a good enough job of watching my sugar/carb intake between blood tests so I have to go full on diabetic diet.

The thing I really miss is bread!!! An easy meal for myself ( because I don’t eat any kind of meat due to allergies) would be a PB sandwich on some kind of grain bread. Quick and mostly healthy lol!

I love tuna and tuna melts so this seemed like a great recipe/meal to try. I saw it in a magazine in the doctors office and took a picture of the recipe so I could try it!

It only took a few minutes to prepare and it really did taste great. The recipe called for 3/4 tsp. salt but I omitted that because I really didn’t think it needed it and I am glad I did! It tasted just fine without it!

Spicy Buffalo Ranch Chicken Meatballs

When I gave these to Chris for dinner the other night (Dillon is on an afternoon shift right now), I thought that this time I overdid it with the spicy part lol. It took 2 glasses of milk and a runny nose, but he did eat them all and enjoy them lol!

This is an easy recipe to make and if you do as I did and double it, it’s an extra “Freezer Meal” for another day This is the time of year that I try to make double of whatever I am making to freeze for the busy month of December when cooking time is at a minimum, ensuring I not only get the Christmas stuff done I want to but that everyone is also being fed good homemade meals with little effort on my part!

Homemade Tomato Soup

Not only homemade… but made with tomatoes from my garden!!!

A family member isn’t feeling up to par, so I thought I would make a few different kinds of soup for them. I don’t know about anyone else, but hot, homemade soup always makes me feel better. There are some soups that are always my go to when feeling under the weather, but I think any soup that someone else makes for you is definitely going to hit the spot!

Jerk Chicken Wings (Baked)

I was making Pizza and Wings for dinner the other night and I can’t for the life of me remember if I have posted them before so I decided I would post it anyway…. just in case! I am pretty sure I have posted a regular jerk chicken recipe, just not wings.

Chris says these are the best wings around… and he is a chicken wing connoisseur lol. I make my own jerk seasoning/marinade, let the wings marinate in it for at least 6 hours and then bake the wings… yes… bake. And they are absolutely delicious! I used the Pizza Hut Copycat recipe for the pizza that I always use now and we had better than take out Pizza and Wings for dinner!
