Bad Blogger Award :( Again – Plus Preparing to Prepare for Christmas/Make Ahead Meals/Crock Pot Chicken Stew/Brain Injury Reboot

I apologize…. I had to take a weekend off, and I should have said something ahead of time. I just pushed myself too hard… again…. and had to unwind and get the voices out of my head (the mean ones anyway). Last week was supposed to be my “week off,” but as all of you crafters out there know… idle hands do not go over well in the crafting mind! I didn’t do anything major but I still didn’t do nothing. I got a pretty good head start on my December Make Ahead meals! (You can see some of our favourite Make Ahead Meals here!)

This is what I have prepared so far for December… fingers crossed I can get enough made while I start my Christmas projects/gifts!!!

Between preparing for the craft sale and preparing to get ready for Christmas my brain has been running at full speed and my head/brain finally said enough is enough and shut down. I had to wait for it to reboot… one of the joys of a head injury! This is why I like to/have to have meals prepared for pretty much every day leading up to Christmas so all that is required of me for dinner is to thaw and throw in the oven!

I honestly can’t remember which day it was, but I made a nice big pot of Crock Pot Chicken Stew! The “boys” love it and while it might take a little bit at the start to prepare the veggies and pre-brown the chicken… it is worth it in the end when you can just leave it for the day to cook and have a nice hot meal ready at the end of the day!

Here is my original post for my Crock Pot Chicken Stew… and it’s funny as I was reading it because we are expecting another sh*tload of snow today!!!

I hope you enjoy the recipe and again, I apologize for disappearing for the weekend and hope I am able to pace myself better while preparing for Christmas so that isn’t necessary again!


Yesterday we had a nasty winter storm forecasted.  While we did get the storm it wasn’t as bad as they originally called for. Not to say we didn’t get a sh*tload of snow and very windy conditions, we didn’t get the almost foot of snow they said we would… thankfully.  It is still a mess outside but at least we missed most of it.

With a storm coming, it seemed the perfect day for a pot of stew and a loaf of freshly baked bread. I prepared everything first thing in the morning…. just in case we ended up losing power.  I figured it would be very easy to just switch the plug on the crock pot to the generator if needed and still be able to serve a nice hot, storm worthy dinner!

For a bit of a twist, I added a can of cheddar cheese soup to the stew to add a little bit of cheese flavour to the thick and hearty stew.

Ham, Potato and Green Bean Casserole – Crock Pot Dinner

As I mentioned in my last post, I cut the lawn on Wednesday and it is a long process so I wanted to get some ready to cook in the crock pot so that when dinner came along all I had to do was to dish it out.

This is a very easy recipe to make and is full of flavour. It is also a great alternative for using leftover ham!

Crock Pot (Quick and Easy) Pork Tenderloin

There is nothing like throwing a few things in the crock pot and then going back hours later to a delicious meal. When I cook this, I almost wish I ate pork because it smells SO good when it’s cooking!

This recipe is quick and easy to prepare and tastes delicious covered in the sauce/gravy made while cooking!

BBQ Brisket in the Crock Pot

Last week was Chris’ birthday, so of course I made a special meal for him of BBQ brisket, his favourite potatoes, veggies, Caesar salad, whole wheat baguette and his favourite Faux Black Forest Cake.  He gorged himself but definitely enjoyed the meal… Happy Birthday Chris!

This recipe did take time…. most of it spent waiting but I made it over the course of two days… so be prepared to hurry up and wait lol!

Buffalo Chicken Chili – In the Crock Pot

I’ll admit, I was a little bit leery about making this.  Chris isn’t always the biggest fan of anything cooked with cream cheese in it but I needn’t have worried about it…. both he and Dillon were big fans of this chili!

I saw a recipe for this a while back in some magazine and thought I would try a batch from what I could remember and what I thought would taste good in it.  It is a sort of throw everything in the crock pot and let it cook sort of meal which is perfect for busy days!

Make Ahead Meals/Freezer Meals

Wednesday I got a start on my make ahead/freezer meals for the coming season/holiday season.  I made 2 x lasagna, 2 x chili and when I was making my Taco Stuffed Pasta Shells, I was able to make 2 pans so I would have one to freeze.


This is the time of year I like to start getting a bunch of make ahead meals stocked up in my freezer.  I don’t do it for any particular reason, mostly because it’s nice to know that if there is a day I don’t feel like cooking, dinner is only a matter of defrosting something from the freezer and popping it in the oven. Make ahead or Freezer meals are also great to have on hand for the coming holiday season.  We all know how busy we get, especially come December and it’s nice knowing that dinner isn’t one of the things that can add stress to the holidays.  Or even knowing that having unexpected company show up and wondering what to feed them. Freezer meals can be cooked straight from the freezer in cases such as these but it obviously will take longer to reheat.

No matter what happens in a day, I like knowing I have the option of not cooking on any given day because I have a freezer full of precooked meals on hand to save the day.

Thanksgiving Recap

I thought with our Canadian Thanksgiving being this coming weekend… October the 8th (and yes, I do know it seems early, especially to those of you in the US!)… I would do a recap of some of our favourite holiday recipes.  There are some things you just have to have with your turkey dinner…. stuffing, mashed potatoes, good gravy, cranberry sauce, pumpkin pie…. you get the picture!
