I took our ground beef the other night with the intention of making a pot of chili…. only to find out I had used the kidney beans I had to make a pot of Vegetable Soup. That totally messed my dinner plans.
I could have always fallen back on one of my Freezer Meals… yes, I do still have some lol… .but I had already thawed the ground beef so I had to use it.
This meal came to mind and the end result was very well received!
I didn’t take as many “step by step” pictures as I should of because…. well, when I get my camera app open, someone always seems to look so cute that I get pretty distracted and forget what else I am supposed to be taking pictures of originally….. little Miss Lucy lol! She is a joy and is getting so BIG already!
Here is a quick to prepare, hearty dinner. Very little prep time, other than washing, peeling and chopping the vegetables, but you can do that ahead of time and have this meal ready to toss in the oven.
The only trouble I have with the veggie prep is that our hound, Leroy, thinks that every time I am chopping the veggies he should be getting carrots or something and stands there staring at me until I “accidentally” drop something for him lol. Do you know awkward it is trying to get stuff done with someone/something staring at you the whole time lol?
Anyway, this is a quick and delicious meal, quick enough to prepare for any night of the week!
Happy Birthday To Me lol! I am writing this post on Thursday so that I can take today off! I actually made this meatloaf on Wednesday and just a note, this recipe makes 2 meatloaves so if you don’t want to make the two rather large meatloaves cut the recipe in half. My freezer meals for the month of December are done… I technically do not have to cook for the whole month of December now but I decided to do a few more so that I won’t have to worry about it for the beginning of January as well lol… the after Christmas hangover season. Today (Thursday) I am going to make a couple of pans of everyone’s favourite “Baked Macaroni,” and that is it… no more cooking until sometime in January… thaw and reheat and that’s it…. woo hoo!
As with most meatloaf recipes, this is quick and easy to mix together and get in the pan and the glaze is just as easy to make and brush on the meatloaf part way through cooking and is absolutely delicious. It also freezes wonderfully so you too can have a freezer meal on hand for those days where you just don’t want to!
I swear that dinner this week has been the last thing on my mind. As convenient as digging into my growing Freezer Meal selection for December would be, I know I am going to appreciate that way more in December.
This casserole is easy and quick to put together and might very well be a new addition to your comfort food list this coming winter season!
I apologize…. I had to take a weekend off, and I should have said something ahead of time. I just pushed myself too hard… again…. and had to unwind and get the voices out of my head (the mean ones anyway). Last week was supposed to be my “week off,” but as all of you crafters out there know… idle hands do not go over well in the crafting mind! I didn’t do anything major but I still didn’t do nothing. I got a pretty good head start on my December Make Ahead meals! (You can see some of our favourite Make Ahead Meals here!)
This is what I have prepared so far for December… fingers crossed I can get enough made while I start my Christmas projects/gifts!!!
Between preparing for the craft sale and preparing to get ready for Christmas my brain has been running at full speed and my head/brain finally said enough is enough and shut down. I had to wait for it to reboot… one of the joys of a head injury! This is why I like to/have to have meals prepared for pretty much every day leading up to Christmas so all that is required of me for dinner is to thaw and throw in the oven!
I honestly can’t remember which day it was, but I made a nice big pot of Crock Pot Chicken Stew! The “boys” love it and while it might take a little bit at the start to prepare the veggies and pre-brown the chicken… it is worth it in the end when you can just leave it for the day to cook and have a nice hot meal ready at the end of the day!

Yesterday we had a nasty winter storm forecasted. While we did get the storm it wasn’t as bad as they originally called for. Not to say we didn’t get a sh*tload of snow and very windy conditions, we didn’t get the almost foot of snow they said we would… thankfully. It is still a mess outside but at least we missed most of it.
With a storm coming, it seemed the perfect day for a pot of stew and a loaf of freshly baked bread. I prepared everything first thing in the morning…. just in case we ended up losing power. I figured it would be very easy to just switch the plug on the crock pot to the generator if needed and still be able to serve a nice hot, storm worthy dinner!
For a bit of a twist, I added a can of cheddar cheese soup to the stew to add a little bit of cheese flavour to the thick and hearty stew.
I had a real hankering for fish for dinner the other night. Myself, I prefer it just baked with a little bit of salt, butter and lemon juice, but Chris likes it lightly crusted. This time I did it his way lol.
This way to bake fish is very easy to prepare and tastes great! The top is nice and crispy and the fish just falls apart in your mouth! It is certainly not the deep fried greasy, yet delicious fish you get from the fish and chips restaurants as a treat lol, but it is still great in it’s own right!
I have been looking for different options to diabetic meals. I apparently hadn’t been doing a good enough job of watching my sugar/carb intake between blood tests so I have to go full on diabetic diet.
The thing I really miss is bread!!! An easy meal for myself ( because I don’t eat any kind of meat due to allergies) would be a PB sandwich on some kind of grain bread. Quick and mostly healthy lol!
I love tuna and tuna melts so this seemed like a great recipe/meal to try. I saw it in a magazine in the doctors office and took a picture of the recipe so I could try it!
It only took a few minutes to prepare and it really did taste great. The recipe called for 3/4 tsp. salt but I omitted that because I really didn’t think it needed it and I am glad I did! It tasted just fine without it!
