Salsa for our Christmas Preserve Baskets

I had fully intended to make this salsa in the summer when I had easy access to fresh tomatoes. You know what they say about good intentions??? Well, my intention was to make it in the summer but ended up being the week before Christmas and I had to use canned, diced tomatoes instead of fresh. It still turned out well but would have been even better with fresh! This salsa would make for a great snack with your favourite tortilla chips or even crackers, or used in whatever recipe you have that calls for salsa.

Taco Pickles

Saturday I was so busy that typing didn’t even enter into my day.  I made these Taco Pickles and 4 different kinds of Christmas goodies. I haven’t even started wrapping yet but at least everything else is getting done… albeit not as quickly as I would have liked lol.

These also go by the name Mexican pickled vegetables but I’ve always called them Taco Pickles and they will make a great addition to our Christmas Preserves baskets this year!

Green Tomato Relish

I ended up with a whole big bowl of green tomatoes in my garden that I knew with the cold weather fast approaching were not going to ripen.  I didn’t want to just toss them over the fence for the cows, that seemed a waste of the fact I was actually able to grow vegetables this year.  I decided to try an old recipe I had for a Green Tomato Relish.

The smell of relish cooking is delicious…. it could taste awful but it sure makes the house smell nice. I only ended up getting 5 jars of this relish but it is still better than having wasted them!

Canning – Christmas Baskets – Preview and Review

Yesterday I was asked what sort of items we added to our Christmas baskets last year.  For the life of me I couldn’t remember.  I thought it would make a great post to share the recipes we canned last year for our baskets and also, what we have going already this year.

Everyone seems to love receiving the Christmas Preserves Baskets that we make up each year.  I love to make gifts for people and receive gifts made from others.  There is something really touching knowing that someone spent time and effort to make a gift just for you and the fact that chances are while they were making it, they were thinking about you!

Cauliflower Relish – Canning

A few Christmases ago we were gifted some preserves from a neighbor and one of the jars contained some Cauliflower relish.  Chris went nuts for it so I had to ask the neighbor for their recipe. I substituted the all green peppers in the recipe and added some red peppers for a bit more colour and prepared 7 jars (I don’t know how I keep ending up with odd numbers lol) to put away for our Christmas Preserves Baskets!

While technically it took 2 days to make this relish, the majority of the time was spent waiting while the vegetables sat in the fridge over night lol!

Thanksgiving Recap

I thought with our Canadian Thanksgiving being this coming weekend… October the 8th (and yes, I do know it seems early, especially to those of you in the US!)… I would do a recap of some of our favourite holiday recipes.  There are some things you just have to have with your turkey dinner…. stuffing, mashed potatoes, good gravy, cranberry sauce, pumpkin pie…. you get the picture!

Pickled Beets – Canning

I am back, after a long weekend.  We tried a new Chinese food restaurant on Friday night and have all been sick and suffering ever since.  Not sure we will be going back there again!!!

Friday during the day… before the onslaught of Chinese food illness… I made a big batch of pickled beets.  We all LOVE pickled beets and they make a great addition to our Christmas Preserves baskets! What possessed me to buy 12 lbs. of beets to pickle is beyond me 😦

Zucchini Relish

With having those gigantic zucchini from my garden I was struggling with what I wanted to make with them.  My mother-in-law suggested zucchini relish because she loves it…. so that’s what I made!  When I grated those zucchini it was hard to believe that I ended up with 16 cups of zucchini!!!  I only needed 12 cups for my recipe, so I am trying to decide now if I want to freeze what’s left over for another day or make something else.

In some places, zucchini relish is considered a “hot dog” relish.  I’m not sure why but I just call mine by the very bland “Zucchini Relish.”

Garden Update

I just had to share my giant zucchini!!!  (I took a picture of them beside some bananas to give a size gauge!)

Chris came in the house the other day and said he had just seen the biggest zucchini he had ever seen.  I figured someone at work had brought one in or something, I certainly didn’t expect that he saw it in MY garden lol.  I went outside to check and sure enough, there was a rather large zucchini in my garden…. not only that…. there were two of them!  I couldn’t believe my eyes.  They really were big.

I brought them inside and “displayed” them on my kitchen table lol.  I was very proud of the fact that I actually grew them.  Then it came time to decide what I was going to do with them now that I grew them lol. They would sure make a lot of zucchini bread but I decided that this weekend I am going to make some zucchini relish with them for our Christmas preserves baskets!!!  I will post the recipe once I have made it…. but for now I will leave you in awe of my (fluke) gardening skills!

And here are my zucchini with some of the tomatoes I have been picking from my tomato plants!

With canning season approaching, and a list of things we want to “can” this summer for our Christmas Preserves baskets, I thought it might be a good idea to post a canning introduction/informative post for those considering trying to can this summer!

Homemade jams, pickles and such make great gifts for anyone!

This year I/we are thinking about trying out a few different things for our baskets such as pickled green onions, mustard pickles, pickled carrots, something called taco pickles, sauerkraut and more!
