Cream of Broccoli & Asiago Soup

Although we had to postpone our visit again due to weather to the coming weekend, I still made another pot of soup for when Kim and family were coming up last weekend.  I did freeze it, well most of it because Chris wanted a bowl lol, so that I would still have it to simply reheat for this weekend’s visit because once I told Kim what kind of soup I had made, her response was a resounding Yummmmmmm lol! Below is the recipe for this soup… if you love broccoli cheese soup, this is definitely a recipe you will want to try!

Cream of Chicken Soup

The kids were supposed to come up last weekend, but due to a severe weather warning we put it off to the coming weekend.  I had planned on making a pot of soup for lunch when they came up. Chris insisted that I could still make the pot of soup…. for him lol. Well, I did end up making the soup and we did have it for lunch…. and dinner that day.  Made for an easy dinner day and everyone had some nice hot homemade soup in their bellies to wait out the storm!

Broccoli/Cauliflower Cheese Instapot Soup

I am pretty sure I mentioned in an earlier post that I have been on a soup kick lately.  I don’t know if it’s because how easy it is to just heat up a bowl of soup for lunch or dinner or what the reason is behind this soup kick but the other day I thought it would be nice to have some broccoli/cauliflower cheese soup and I was going to try to make it in my Instapot!

Instapot Creamy Tomato Soup

After how good the Potato Soup turned out in my Instapot, I decided I wanted to try a different type of soup and it ended up being a tomato soup.  And it was/is delicious!  For whatever reason, I have been in a soup sort of mood so don’t be surprised if I end up posting more soup recipes made in the Instapot!

INSTAPOT Cheesy Potato Soup

Yesterday was a very bad day.  We had to have our dog of 12 years put to sleep.  As all of you dog lovers out there, you know they are more than just dogs… they are family. Kita was such a good dog, right from the start.  She was a rescue dog we got as a puppy and was never anything but a loyal, well behaved dog that loved everyone she met. It didn’t matter who showed up at our house, in Kita’s mind, they were there to visit her!

It is going to be very difficult not having her in our lives everyday but as Kim told me last night… Kita had a very good life, especially considering her beginnings, and we have a lot of memories of her to comfort us once the initial grief starts to subside. Hopefully Kita is now somewhere with no pain and she can go to the L-A-K-E every single day and play with the ducks!!!

I could write a huge post singing her virtues, although not without a lot of Kleenex,  but I still wanted to share this soup recipe I made last night in my INSTAPOT.  None of us felt like eating, but knew we should.  Potato soup is my go to comfort food and that is exactly what we needed last night.  It is the favourite thing my grandmother makes for me when we visit and whenever I make it I can feel her right alongside of me cooking!

Wonton Soup

Now I didn’t actually make the Wontons, but when I saw some in the freezer section of the grocery store I just knew I had to buy some and make some soup with them for us! I added some leftover Sweet & Spicy Pork, chopped Chinese cabbage and green onions to the broth and it was delicious! And super fast and easy!
