Pumpkin Pie

I knew I was going to be out of town today but didn’t get anything ready to post, so I thought I would reshare my pumpkin pie recipe. It seems fitting since it is our Canadian Thanksgiving this weekend !

I did a lot of cooking yesterday and hopefully I will get it all posted before Thanksgiving actually arrives.

I made two pumpkin pies to have with dessert. We are going to have that and the other half of the Chocolate Peanut Butter Cheesecake I made last week and froze.

I know it seems easy to just buy a can of prepared pumpkin pie filling but it really isn’t that much more difficult to mix it up yourself with a can of pumpkin puree. I have been making this same recipe for probably almost 30 years now… and yes, that was hard to admit to… and other than the one time I forgot to add the sugar lol, it has always tasted great.

Pumpkin Spice Jelly Roll Cake with Cinnamon Cream Cheese Filling

Phew!  That title is sure a mouthful!!!  Wednesday was the Maple Leafs first regular season hockey game. I always make Chris a special dinner and dessert for the occasion lol.  This year I made this Pumpkin Jelly Roll cake and while he asked me what it had to do with the Leafs (nothing other than the association of fall meaning falling “Leafs” lol), it sure didn’t stop him from enjoying it!

Thanksgiving Recap

I thought with our Canadian Thanksgiving being this coming weekend… October the 8th (and yes, I do know it seems early, especially to those of you in the US!)… I would do a recap of some of our favourite holiday recipes.  There are some things you just have to have with your turkey dinner…. stuffing, mashed potatoes, good gravy, cranberry sauce, pumpkin pie…. you get the picture!

Stuffing Balls

Yes, stuffing lol.  I don’t know about anyone else, but I LOVE stuffing and will take any excuse I can find to make it.  I thought these would make a different addition to the finger foods I am making for the baby shower!

While me and everyone else really enjoyed the Stuffing Ring when I made it for Christmas, I don’t see any reason why we can’t also include these on occasion!
