Zucchini Boats

Last week I wanted to do something different with the zucchini I bought to have with dinner one night. Zucchini boats seemed like a great idea. Both Chris and Dillon love zucchini, whether it be in bread, grilled or whatever so keeping it interesting means making it in different ways.

This one is a favourite! This time I served it up with some rice and homemade meatballs!

Balsamic Roasted Asparagus and Mushrooms

I remember a while back asking Chris if he liked asparagus. He said No. I then asked him if he had ever had it…. again he said No lol! I made it for them the first time with parmesan cheese and both he and Dillon loved it…. so much so that he asked me to make it more often. I wonder what else he doesn’t “like” that he hasn’t ever tried??? I had some mushrooms that I had to use up before they got nasty, so I decided to add them to the asparagus because who doesn’t like roasted mushrooms??

This is a very quick and easy recipe roasted in the oven with mushrooms, balsamic vinegar, dill etc., with a prep time of about 5 minutes. You can’t beat that for a delicious side!

Parmesan Roasted Asparagus and Grape Tomatoes

That is a big title for an easy but delicious recipe lol! This recipe I made again the other night for dinner and wanted to share it with everyone.

It is quick to prepare and roasts in the oven in 20 minutes so your “Side” is ready in no time at all! I added a drizzle of a balsamic vinegar reduction to the top and plates were almost licked clean lol!

Easy Cheesy Scalloped Potatoes

I was making ham and pineapple the other night for “the boys,” and was thinking about what I would make with it.  I don’t know why, but as soon as I think about making ham, I think about scalloped potatoes, so that’s what I made.  They just seem to be The side dish that goes with it. 

While no one really likes the “old fashioned” way of making scalloped potatoes…. making it by layering the sliced potatoes with onions and flour and then adding dabs of butter and pouring milk over top before cooking.  I always found that so tasteless and that sort of defeats the purpose of cooking for me!

Adding some cheese and lots of garlic makes way more sense and practically disappears off the plates!

Cream of Broccoli & Asiago Soup

Although we had to postpone our visit again due to weather to the coming weekend, I still made another pot of soup for when Kim and family were coming up last weekend.  I did freeze it, well most of it because Chris wanted a bowl lol, so that I would still have it to simply reheat for this weekend’s visit because once I told Kim what kind of soup I had made, her response was a resounding Yummmmmmm lol! Below is the recipe for this soup… if you love broccoli cheese soup, this is definitely a recipe you will want to try!

Salsa for our Christmas Preserve Baskets

I had fully intended to make this salsa in the summer when I had easy access to fresh tomatoes. You know what they say about good intentions??? Well, my intention was to make it in the summer but ended up being the week before Christmas and I had to use canned, diced tomatoes instead of fresh. It still turned out well but would have been even better with fresh! This salsa would make for a great snack with your favourite tortilla chips or even crackers, or used in whatever recipe you have that calls for salsa.

Taco Pickles

Saturday I was so busy that typing didn’t even enter into my day.  I made these Taco Pickles and 4 different kinds of Christmas goodies. I haven’t even started wrapping yet but at least everything else is getting done… albeit not as quickly as I would have liked lol.

These also go by the name Mexican pickled vegetables but I’ve always called them Taco Pickles and they will make a great addition to our Christmas Preserves baskets this year!
