Canning – Christmas Baskets – Preview and Review

Yesterday I was asked what sort of items we added to our Christmas baskets last year.  For the life of me I couldn’t remember.  I thought it would make a great post to share the recipes we canned last year for our baskets and also, what we have going already this year.

Everyone seems to love receiving the Christmas Preserves Baskets that we make up each year.  I love to make gifts for people and receive gifts made from others.  There is something really touching knowing that someone spent time and effort to make a gift just for you and the fact that chances are while they were making it, they were thinking about you!

Zucchini Relish

With having those gigantic zucchini from my garden I was struggling with what I wanted to make with them.  My mother-in-law suggested zucchini relish because she loves it…. so that’s what I made!  When I grated those zucchini it was hard to believe that I ended up with 16 cups of zucchini!!!  I only needed 12 cups for my recipe, so I am trying to decide now if I want to freeze what’s left over for another day or make something else.

In some places, zucchini relish is considered a “hot dog” relish.  I’m not sure why but I just call mine by the very bland “Zucchini Relish.”

Canning

With canning season approaching, and a list of things we want to “can” this summer for our Christmas Preserves baskets, I thought it might be a good idea to post a canning introduction/informative post for those considering trying to can this summer!

Homemade jams, pickles and such make great gifts for anyone!

This year I/we are thinking about trying out a few different things for our baskets such as pickled green onions, mustard pickles, pickled carrots, something called taco pickles, sauerkraut and more!

Gingerbread Jelly 

This week I made a batch,  well two batches, of Gingerbread Jelly for our Christmas Preserves baskets.  It was very easy and surprisingly quick to make.  And let me tell you, having the spicy scent of gingerbread in the house was wonderful!

Tomorrow it’s Dill Pickle making time!

Cranberry Raspberry Jelly 

Today,  while it’s still relatively cool outside,  I am making a batch of Cranberry Raspberry jelly to put away for our Christmas preserve baskets!

Jelly is pretty easy to make because it’s made with juice instead of whole fruit and is a great introduction to canning!

“Never Again Blocked Sinuses ” Horse Radish – Pickled/Canned 

Today I didn’t get any crafts done 😕.  I was way too busy in the kitchen, that and my current project is time consuming. I will try to update on that tomorrow!

Today I made a batch of “Never Again Blocked Sinuses ” Horse Radish! Boy was it potent smelling! 😭
