I swear that dinner this week has been the last thing on my mind. As convenient as digging into my growing Freezer Meal selection for December would be, I know I am going to appreciate that way more in December.
This casserole is easy and quick to put together and might very well be a new addition to your comfort food list this coming winter season!
I got absolutely nothing done yesterday except for grocery shopping so I thought I would repost our favourite chicken fingers recipe!
Who doesn’t love a good feast of chicken fingers and fries? I can’t think of many people who don’t. The problem is the deep frying. I have my air fryer to make the French fries but if I want everything done at the same time for dinner, I had to do something different with the chicken fingers.
Baking seemed like the perfect way to cook them and to hopefully keep the taste as good as if they were fried. Success! They were nice and crispy on the outside (thanks to pre-toasting the panko and still nice and moist on the inside!) Everyone loved them! I served them with some homemade Honey Mustard Sauce and all of the chicken fingers disappeared!
I was at a real loss as to what I was going to make for dinner on Sunday. I knew I had thawed some chicken breasts but didn’t want to make the “same old thing.” I then remembered I also bought 2 tubes of crescent rolls and that made me thing of making a chicken pot pie with the two of them.
The “Boys” both loved it and totally cleaned their plate…. and again… there was enough leftover to freeze for another night, adding to my stash of Freezer Meals!
When we went grocery shopping the other day, chicken drumsticks were on sale. I bought a tray of them even though I had no clue how I was going to cook them. I opted for an easy recipe, full of flavour and with a crispy, sticky drumstick in the end!
The boys really enjoyed them and there was enough of them to freeze for another Make Ahead meal…. Bonus!!!
The smell wafting out of my frying pan/oven the other night was almost enough for me to take the plunge and have some of the chicken I was making for “the boys” for dinner the other night! I made them a delicious smelling (and tasting according to them) lemon garlic chicken! I served it over fettuccine noodles tossed with butter, garlic and parmesan and served it up with some bread and they had an awesome dinner…. and I had enough leftover for another night’s dinner! Woo hoo! Another “I don’t feel like cooking” meal in the freezer!
I took out some chicken breasts the other day for dinner. Originally I was just going to bake them in the oven with some kind of sauce or whatever on them. Then I started thinking about how much the boys enjoyed the chicken I cooked in it for them last week.
Instead of a big saucy recipe, this time I was just cooking the chicken breasts whole and with a few seasonings mixed in with olive oil and chicken broth, coating the chicken in the mixture before cooking them! Chicken breasts come out so juicy and tender when cooked in the Instapot. I swear I could put just about anything on them, cook them in the Instapot and they would be delicious no matter what!
Earlier this week I decided I wanted to try something else in the Instapot for dinner. I knew I had a package of chicken breasts in the freezer so I grabbed them and made this delicious Honey Garlic Chicken that I served over rice, well, rice for Chris…. Pasta for Dillon lol!
No matter what it was served on this was a definite clean their plates kind of meal! They both really like that sort of meal!
Yes, another Instapot recipe…. I’m sorry lol. I have a new toy to play with and I have been doing exactly that! This time it is a recipe for Lemon Garlic Chicken. I think I could have “seared” the chicken a bit more but it was certainly cooked through and thoroughly enjoyed by “the boys!” Lesson learned on the searing part.
