Air Fryer – Crispy Buffalo Chicken Wings

Let me start by saying that Chris is on holidays, halfway through, and he has thrown my schedule off lol…. so I am blaming him for the lack of or tardiness of my posts! Sorry Chris!

Okay….until last week I had really only used my air fryer to make fries even though I know they are capable of much more….. so I decided it was time to try something different.  I chose chicken wings.  Chris LOVES chicken wings, Dillon eats them but he isn’t the fanatic that Chris is.

I have to say, these did turn out really well and they were thoroughly enjoyed! I served them with pizza made with the Pizza Hut Crust recipe I posted a few weeks ago!

Baked Chicken Quesadillas

When I made chicken breasts for dinner the other night I made two extra with the intention of making these chicken quesadillas with them.  I personally love quesadillas too so I made one for me with just the veggie portion of them and fed the chicken ones to Chris and Dillon.

I was going to serve them with some sour cream and more salsa but then I remembered I still had some of the salsa and Greek yogurt sauce I made for the Taco Burgers and instead served them with that sauce for dipping the quesadillas and some Taco Spagetti!

Garlic Buttermilk Drumsticks

Since we had a bit cooler day on Tuesday, I made some chicken drumsticks in the oven.  They were marinated for about 6 hours in the fridge in a garlicky, buttermilk mixture before baking until golden brown! It was something both “boys” thoroughly enjoyed!

Chicken Bacon Ranch Bake

Let me start by saying thank you, thank you, thank you to Lacie from easypeasypleasy.com for this delicious recipe idea!

I tried this for dinner last night and even though I am not supposed to eat any sort of meat, just the smell alone was enough for me to have some, consequences notwithstanding lol.  AND it was so worth it!

Alfredo Chicken Pasta (with spinach, sundried tomatoes and green onion)

Yes, I do know that is a very big title for a recipe lol but I didn’t want to leave anything out!

I forgot to take pictures as I was going but since this is a pretty simple recipe I will still post it in case you would like to try it yourself.  Even Dillon, who professes to dislike spinach cleaned his plate.  Mind you, I didn’t tell him he was eating spinach until afterwards but either way they both loved it!

I gave it to them with one of the loaves of that fresh Easy French Bread I made!

Sun Dried Tomato Chicken in Cream Sauce

I have honestly never cooked with Sun Dried Tomatoes before. I am not sure why, could just be because we love fresh tomatoes so much?  Either way, I happened on them in the grocery store and thought, why not give them a try!

I had made chicken in a cream sauce before, it seemed like a good fit to add the sundried tomatoes to this recipe.

The outcome was awesome.  Chris and Dillon cleaned their plates, right down to the pattern lol!

If you have never cooked with these before, it is well worth trying out!
