Gum Drop Fudge

I guess I really should have posted this recipe before Christmas but I simply ran out of time! The past two weeks or so have been so busy that when I actually get to my laptop to post I find I am typing 2 or 3 posts at once to get them done and posted. I sure dropped the ball getting to this one lol!

This is another version of a condensed milk fudge…. which means it is quick and easy to make and can be done entirely in the microwave!

Quick & Easy Maple Walnut Fudge

This is another treat I made for the cookie trays I had out to neighbours and family at Christmas. It is a condensed milk fudge, meaning it is very quick and very easy to make. All total, it probably takes less than 10 minutes making it in the microwave!

It was funny because the day I made the fudge our upstairs smelled like maple for hours after but if you went downstairs it smelled like turkey because I was cooking our turkey to carve and freeze ahead of time in one of those electric roasting pan. Quite a smell difference between up and down stairs lol.

I also made a pan of my Mint Chocolate Fudge for the baskets and a couple of gift boxes mixed fudge.

Dulce de Leche – Condensed Milk Fudge

A week or two ago we had a nasty snow storm. It was Chris’ first day back to work after his Christmas holidays. I swear our driveway had at least 8 – 10 inches of snow, if not a foot! I went outside to try to at least get the front and back decks shoveled for him (and so there was less snow being brought in by the dogs). Next thing I know, our neighbor from across the street…. Hi Charlene!… yelled over to ask me what I was doing. She told me that her husband was planning on coming over with his tractor to do our driveway shortly.

Needless to say, Chris was overjoyed when he got home and realized he didn’t have to dig us out lol! I said I would make some fudge as a thank you, and as terrible as it is, I am only just getting to it today!

This is what the snow looked like that day! You can see our wonderful neighbor in one of the pictures cleaning up Mother Nature’s mess!

Condensed Milk “Christmas” Fudge

It has been a very traumatic/dramatic/draining weekend.  I am finally starting to lose some of the pain from the gout in my shoulder but yesterday we had to rush one of our dogs to the emergency vet clinic.  She is going to recover but had to have an emergency hysterectomy last night.  Thankfully she is now resting at home, drugged to the nines with a shaved/stitched up belly.

Obviously that took precedent over Christmas baking, posting, everything else…. I didn’t even make beds yesterday!  Today however, I made a batch of condensed milk fudge.  I love making fudge this way.  It is so quick and easy and you can add whatever you want to it to create your own version of the fudge.  I generally stick with making a batch of Chocolate Mint fudge but this year I thought I would also try this one. I will hopefully post the Chocolate mint one tomorrow!

Salted Caramel Chocolate Fudge

Another Dr’s appointment tomorrow/today, thankfully I officially started my Christmas baking on Wednesday.  I will be posting as I make things. I think Kim and I are going to have a “Baking Day” in a couple of weeks to finish off any baking we are planning on doing.  On top of the Preserves baskets, I like to hand out cookie trays to a few people, homemade of course!
