BBQ Brisket in the Crock Pot

Last week was Chris’ birthday, so of course I made a special meal for him of BBQ brisket, his favourite potatoes, veggies, Caesar salad, whole wheat baguette and his favourite Faux Black Forest Cake.  He gorged himself but definitely enjoyed the meal… Happy Birthday Chris!

This recipe did take time…. most of it spent waiting but I made it over the course of two days… so be prepared to hurry up and wait lol!

Shepherd’s Pie (In the Crock Pot)

Let me start by saying that while I say “In the Crock Pot,” the shepherd’s pie is made the same as you would make it if cooking it in the oven but I throw everything in the crock pot and let it cook slowly so it comes out tasty and piping hot.

I made mine on Wednesday so that when I got back from my weekly Dr’s appointment, all I had to do was put the bowl back in the crock pot and turn it on and all my dinner prep work was done and I could nap lol!

My shepherd’s pie never comes out “pretty” when I serve it because Chris loves extra “gravy” in the meat layer and lots of creamed corn and mixed veggies in his!

Hearty Beef Stew

Yesterday, with still feeling crappy, I threw a pot of stew in the crock pot to make for a quick and easy dinner.  This would have been great if I had remembered to turn on the crock pot!!!!  I went to make sure the veggies were all cooked around 4 pm and noticed the pot was cold.  First I thought something was wrong with it… then I realized I had plugged it in but hadn’t actually turned it on.  Not a pleasant surprise!  So, I turned it on high and hoped it would be ready for a later dinner!  Surprisingly enough, the stew was ready in time for a 7:30 meal.  Phew!

THEN…. up at 5 am this morning, my normal wake up time…. I let one of the dogs out to do his “business” and he came back in reeking of skunk!!!!  Not a good start to the day but I suppose being Friday the 13th, it could be considered expected!  Thankfully it wasn’t a full on strike like they normally get but it still smells of skunk in the house!

I was really hoping we  would get through one summer/fall season without at least one of them trying to make friends with the “black cat with the white stripe!”  We have a black cat and I always wonder if that’s who they think they are visiting… it’s that or our dogs really aren’t that bright??? Hmm….

Who says Crock Pots are for Winter? – Part #2

I still don’t recall the conversation Kim wrote about in Part #1 of this post.  It sounds like something I would say but I just don’t remember.  That being said, I honestly think that crock pots are even more useful for summer than in winter.

Who wants to heat up the whole kitchen in the middle of a heat wave?  Not me!  I still like to feed “the boys ” full,  hearty meals and not always just bbq!
