Ham, Potato and Green Bean Casserole – Crock Pot Dinner

As I mentioned in my last post, I cut the lawn on Wednesday and it is a long process so I wanted to get some ready to cook in the crock pot so that when dinner came along all I had to do was to dish it out.

This is a very easy recipe to make and is full of flavour. It is also a great alternative for using leftover ham!

Buffalo Chicken Chili – In the Crock Pot

I’ll admit, I was a little bit leery about making this.  Chris isn’t always the biggest fan of anything cooked with cream cheese in it but I needn’t have worried about it…. both he and Dillon were big fans of this chili!

I saw a recipe for this a while back in some magazine and thought I would try a batch from what I could remember and what I thought would taste good in it.  It is a sort of throw everything in the crock pot and let it cook sort of meal which is perfect for busy days!

Crock Pot Pulled Pork

When Dillon took me grocery shopping last Friday one of the stores we shopped at had pork roasts on sale for $1.00/pound.  A great deal, so I bought 3 of them. I fully intend to use at least one of them for another homemade sausage and decided one night this week to make some pulled pork in the crock pot for “the boys” for dinner!  I served it on toasted buns with Salt & Vinegar potatoes…. which I will post another day!

It made enough with only 2 people eating it to freeze some for another day! It is always nice to have a quick meal in the freezer to pull out when you don’t really feel like cooking or you are just really busy!

Pork Chops in the Crock Pot

I made some really tasty pork chops in the crock pot the other night for dinner.  Both Chris and Dillon cleared their plates.  There was a really good sale on pork chops when I did the grocery shopping so I made way more than what I needed for dinner that night but I put the remaining pork chops in an aluminum pan to freeze for a quick dinner one night that I don’t feel like cooking.  You’ve got to love those nights and the knowledge you have something ready made that you just have to pull out of the freezer and reheat!  I really like precooking when I am working.  That and of course, crock pot meals!

But fork tender pork chops, smothered in a thick BBQ type sauce, served with potatoes boiled in minced garlic and chicken broth, definitely take the cake!

Crock Pot Pineapple Chicken

Again I opted to use the crock pot for dinner one night when it was just too damn hot to even go outside to BBQ and I certainly didn’t want to have to put the oven on for any length of time.  Cooking in the crock pot, even in summer, provides you with a delicious dinner without heating up your kitchen when it’s really hot!

This recipe gets rave reviews from both Chris and Dillon and is something that can be made in summer for a make ahead meal or in winter as comfort food!

Hamburger Hash – in the Crock Pot

No, this isn’t really a summer recipe, but it is nice to just throw something in the crock pot earlier in the day and know you will have a delicious dinner waiting for you when it’s time to eat with minimal effort on your part.

This quick and easy dinner makes for a good stick to your ribs, comfort winter time food but it was just as good on a cooler day this time of year!

Crock Pot BBQ Ribs

Last week one of the grocery stores I shop at had ribs on sale.  I got 2 decent size racks of ribs for around $10… the dilemma was how to cook them.  I thought I would cook them in the crock pot and then throw them on the grill for a few minutes to brown them up.

Both racks were eaten in one meal. The meat was so tender it was literally falling off the bone making grilling them a little interesting for Chris but they ended up well worth any aggravation!
