Potato Pancakes

These always make me think of my grandmother…. and I suppose my father because he has always loved them… loaded with sour cream and chives.

I made them a few nights ago for “the boys” for dinner and they are always a big hit! (Even when I burn them a little bit like this time lol)

Ham, Potato and Green Bean Casserole – Crock Pot Dinner

As I mentioned in my last post, I cut the lawn on Wednesday and it is a long process so I wanted to get some ready to cook in the crock pot so that when dinner came along all I had to do was to dish it out.

This is a very easy recipe to make and is full of flavour. It is also a great alternative for using leftover ham!

Easy Italian Chicken Bake

Let me start by saying that this is a one pan recipe… gotta love that! I especially loved it the other day. I don’t know how I managed to be so far behind at dinner time. It’s not like I am going to work right now, thanks to my TBI… but somehow I totally ended up behind schedule and was a half hour late from my planned dinner time. While no one else cares about what time we have dinner, for me it is a schedule that keeps me organized in my frazzled brain… most days!

Either way, I was able to have this dinner on the table and ready to eat in less than an hour and everyone enjoys this recipe! Did I say it was done in one pan lol? Because I was in such a self-imposed rush… I didn’t take as many pictures as I normally would… but that doesn’t make that much difference in the grand scheme of the recipe!

Spicy Turkey Meatballs

I would have to say that meatballs are definitely on the favourites list in this house. Whether they are turkey, chicken, beef, or whatever, they just love meatballs lol.

When Dillon was little, every time I asked him what he wanted to have for his birthday dinner, it was always meatballs and always in a sweet and sour sauce by a brand called Diana. Those were his absolute favourite. He didn’t care what was served with them, he just cared about getting the meatballs.

While he is now a man, meatballs are still a favourite so I try to change them up and make different flavours often. This is one of those recipes.

Honey Balsamic Pork Tenderloin – In the Instapot

I swear I’ve used my Instapot more this week than I have in the past few weeks. It has come in handy to make lunch meat alternatives or just quick meal prep. The Boys love pork tenderloin but I hadn’t tried to cook one in the Instapot and figured it was high time!

This is the recipe I used to make it and it was a huge success…. not only were both plates devoured, it also passed the Chocolate Milk test lol!

Easy and Delicious Chicken Breasts

The other night I had thawed a package of chicken breasts and was deciding how to cook them. I was going to do another Instapot recipe but instead cooked them in the oven.

This recipe was very quick to come together and I ended up with a pan of very flavourful chicken breasts that I served with Poutine for dinner!

Instapot Chicken Cacciatore

Chris and Dillon LOVE Chicken Cacciatore…. they devour it every time I make it lol… not that they complain about what they are fed or anything… it is just one of their favourites.

Make it in the Instapot is a great time saver and the flavours seem amplified cooking it this way! A delicious meal in a fraction of the hands on time!
