Quick & Easy Rice Dish

I always seem to make rice with dinner on Fridays.  Mainly because Dillon doesn’t like rice and if I make rice for dinner when he’s eating with us he won’t eat that part lol.  Yes, he is a fuss ass.  No matter, I made rice again this past Friday…. a recipe I have made many different times and is always a hit!

Feel free to add whatever you like to personalize it to your tastes. I shredded the remaining pork tenderloin and added it to the leftover rice for a quick and delicious lunch the next day.

Quick & Delicious Chicken

I am not kidding with the quick…. or the delicious for that matter.  I have been making this for years yet Chris still commented on how juicy the chicken was when he had it for dinner the other night!

I used chicken breasts but this would also be great on any cut of chicken and if you need more than 2, just double the recipe to accommodate how much you want to make!

Glazed Chicken Meatloaf (with Roasted Potatoes)

I put the potatoes in brackets because I decided to add them to the pan after I did my ingredients pictures and everything else… and the fact they aren’t really a recipe lol.

This is a different, healthier take on meatloaf, using ground chicken instead of beef and passed the dinner test!

Sausage and Onions (Plus)

I did start off with the intention to make simply sausage and onions, that is until I opened the fridge and saw a few things I decided needed to be used up and added them to the sausage and onions. This is where the “Plus” entered the title!

These are all the ingredients I decided to use.

I began by cutting the bacon into one inch pieces. 

I fried the bacon until it was crisp and placed it on paper towels to drain.

I added the onions and mushrooms to the same pan and cooked it until they were both starting to brown. 

Next I added the sausages, again into the same pan, and browned each side. 

While they were browning, I washed, peeled and thickly sliced the potatoes.

I started by placing a layer of potatoes (half of what I prepared) in my roast pan.

Topped this with half the mushrooms and onions, and then half the bacon.

And then repeated the layers, sprinkling salt and pepper to taste and then all but 1 tbsp. Dried parsley. 

I removed the sausages from the pan and cut them in half and placed them on the layers of potatoes and everything else. 

I poured the beef stock over everything, sprinkled the remaining parsley and cooked it covered at 325 degrees for about 3 hours, removing the lid for the last half hour. 

Recipe 

Sausage and Onions  (Plus) 

Preparation time: 30 minutes  Cooking time: 3 hours  Servings: 4

Ingredients 

  • 1 package sausage, your choice, I used hot ones
  • 2 onions, peeled and sliced into big rings
  • 10 – 12 mushrooms sliced
  • 8 slices bacon 
  • 2 cups beef stock 
  • 3 tbsp. Dried parsley 
  • Salt and pepper to taste 

Directions 

  1. Preheat oven to 325 degrees.  Grease small roast pan.
  2. Chop bacon into one inch pieces and fry until crisis. Drain on paper towels. 
  3. Add onions and mushrooms to the same pan and cook until they start to brown. 
  4. Remove from pan and add sausages. 
  5. Brown both sides of the sausages, remove from pan and cut them in half. 
  6. Wash, peel and thickly slice potatoes. 
  7. Start layers by adding a layer of half the potatoes, followed by half the onions and mushrooms and then half the bacon.
  8. Repeat layers.
  9. Sprinkle with 2 tbsp. Dried parsley and salt and pepper to taste. 
  10. Top with halved sausages and remaining parsley. 
  11. Cook at 325 degrees for about 3 hours, removing the lid for the last half hour. 
  12. Serve.

Beef & Broccoli (In the Crockpot!)

Yes, I said in the crockpot lol.  My house has smelled so good all afternoon with this in the crock pot!  Shame I can’t even eat it!

If you are looking for something very tasty, and made in the crock pot  (with minimal effort the last half hour), then this is it!  The taste of Beef & Broccoli, served over hot egg noodles or rice, right in your own home…. no need for take out!
