Instapot Herb Rubbed Chicken Breasts

Here is another example of how the Instapot can save you if you don’t take dinner out to thaw in time lol! I have that problem sometimes but especially this time of year… between getting ready for the craft sale and then getting ready for Christmas… I don’t stop until I go on strike Boxing Day now!

Using the Instapot to cook chicken, or anything else for that matter, seems to seal in the taste and the juiciness of the meats, making for a delicious meal!

Cajun Chicken & Rice – Instapot

The other day it was too hot to have the oven on and too hot to stand on the back deck to BBQ…. so… enter Instapot. What a great tool for days like these. While it might be the same as a nice BBQed steak it is still very tasty and quick and easy to prepare!

(Instapot) Brown Rice Beef Burrito Bowl

The other night I made another great Instapot meal. I have been impressed with everything I have tried to make in it. I was a bit worried when I first got it because I wasn’t all the sure on the “how” it worked but I am really enjoying modifying recipes to make in the Instapot.

I think the Instapot will also be a great cooking means come summer…. I can still make great “indoor” meals without having to turn on the oven!

Instapot Cajun Chicken and Rice

Here is an easy to make Instapot recipe that goes over very well in this house. Chris and Dillon now both love rice. For years… and years… Dillon would not eat rice at all. I don’t know if it was a texture issue or what it was but until the last 6 months or so, he refused to eat rice.

He agreed to try it again a little while back and is now a big fan….go figure. It is great because we love rice and it was a pain in the behind not making it as often as we would like.

Because this recipe is done in the Instapot, it is full of flavour and cooks up quickly… once the Instapot builds up to the correct pressure!

Instapot Beef Carnitas

If you have read any of our posts, you know we love Mexican food… or at least our version of it… and this is another one of these great recipes!

I know these are generally made from pork…. but we prefer it done with beef. These are flavourful and make a great dinner or lunch wit a salad. We had ours on Tomato based tortillas with a side of coleslaw and it is a great meal! Even better is the fact it can be made in the Instapot, giving the beef a great texture for shredding and even more flavour!

Ham in the Instapot

As I have mentioned in earlier posts, Chris has gone completely off processed lunch meats. This has made it interesting finding other options to send in his lunch. I have done numerous Turkey Breasts to slice for sandwiches, same goes for Roast Beef in the Instapot. I have sent egg salad and tuna salad and the occasional PB & Banana sandwiches, trying to keep things different. This time it was a ham. When I was grocery shopping one of the stores had the small, smoked Black Forest Hams on sale and I thought I would cook one in the Instapot and slice it as thin as I could for sandwiches.

Last night Chris thanked me for the extra effort it was taking to come up with and make alternatives for his lunch but I told him that in all honesty having the Instapot made it pretty fast and easy…. not that I minded the acknowledgement!
